Tom Ka Gai (Coconut Chicken Soup)

Reviewed: Nov. 26, 2009
Never tried this soup at a Thai restaurant - in fact I know nothing about Thai food - but this was a great soup, did some modifications though. I only had one can of coconut cream, and I only used 3 cups of water which was plenty. I added a tablespoon of lime juice, omitted the turmeric, and put big chunks of ginger that I took out before serving. I had no green onion and replaced the fresh cilantro with dried cilantro; also added about two or three teaspoons of white sugar. It was a rather yummy soup, all in all! At first my family thought it smelled and tasted strange, but after a few sips they all liked it. Thanks for a great recipe!

Rosy's Palak Paneer

Reviewed: Nov. 1, 2009
This was good, but there was an ingredient missing. Maybe my modifications were at fault? But I doubt it. I used margarine for ghee, about 3 tablespoons of ginger, only half of the required tomato paste, only 1/2 tsp salt (though I think 1 tsp would have been better), only about 3/4 cups water, fresh spinach, and chicken instead of paneer. With all these modifications you might blame me for thinking the recipe wasn't perfect, but really, there was something missing in the spices. It tasted great but next time I'll experiment with perhaps some curry and coconut cream. Thanks for a great base recipe though!

Creamy Rice Pudding

Reviewed: Oct. 30, 2009
With a couple of modifications, this tasted great. I only used 1/8 cup sugar and next time I'll make it even less - the raisins really sweeten it! I'll also add more milk and let it become much creamier since it was a pretty thick pudding, but very yummy anyway. Thanks - this was a quick, easy and healthy dessert to fix up while preparing lunch!

Creamed Cabbage Soup

Reviewed: Oct. 30, 2009
Very nice soup :) I added a cup of chicken broth after reading reviews and it was just perfect. Also used all 2% milk instead of cream, and I only had thin ham slices so I just chopped these in squares (had about 1 and 1/2 cups) and it was very yummy. Only used 1/2 tsp salt, too. Oh and I used 4 small carrots since they're healthy and yummy. Thanks for the great recipe - a very good way to use those cabbages!

Honey Balsamic Vinaigrette

I didn't change one bit of this vinaigrette - it's fantastic. I'm going to make a bottle every week and never have to worry about making last-minute vinaigrette when we have a salad.

Don't Knock it Until You Try it Zucchini Chocolate Banana Nut Milkshake

Reviewed: Sep. 4, 2009
This was great! I didn't have peanuts so omitted them, and only used 3 tablespoons of sugar. I also added some milk to make it a bit easier to pour. My family really liked it and found it rather creative - thanks!

Playgroup Granola Bars

Reviewed: Sep. 2, 2009
These were great with my modifications, though sticky sweet. I only used 1/3 cup brown sugar, next time I think I'll only use a tablespoon - the raisins and honey make it very sweet already. I had no wheat germ so I just replaced it with almond powder, I believe it helped give it a softer texture which I really liked. Thanks for the recipe - I'll play around with it unless I find the perfect combination of sugar, raisins and honey!

Chicken Pot Pie IX

Yummy! I used 1 cup celery and no celery seed, replaced the butter with margarine, used only 1 cup of chicken broth and 3/4 cup milk. Baked it 40 minutes at 375. Could have used more salt but still delicious!!

Chocolate Mint Whoopie Pies

These were okay cookies, my family liked them. Like another reviewer, I wasn't too fond of the dough. The bottom of the cookies burned after 5 minutes so if ever I use this recipe again I'll bake them at 350. The icing made them sticky sweet. Overall, I was a bit disappointed and I don't think I'll make these again.

Sweet Potato Pie I

Reviewed: Sep. 1, 2009
4 stars for the original recipe, 5 stars with my modifications yet not 100% perfect - next time it will be perfect though. First, I used 2 cups of sweet potatoes, I "mashed" them in the blender with the rest of the ingredients. I added a teaspoon of lemon juice, 1 tbsp of flour, 1/4 tsp ginger and 1/4 tsp cloves. I only used half a cup sugar (a mix of brown and white) but next time I'll use 2/3 cup. Next time I'll also double all the spices. Then I'm positive it will REALLY be perfect!!

Cream of Broccoli Soup I

Reviewed: Sep. 1, 2009
Made this without cheddar cheese. To save time, I boiled the broccoli (I used 6 cups) in 6 cups of chicken broth, then mashed it straight in the pot with a potato masher. Very yummy - really liked the nutmeg!

Oma's Cottage Cheesecake

Reviewed: Sep. 1, 2009
My whole family LOVED this recipe! I only used 1 tsp of sugar in the graham cracker crust since my graham crackers were honey-flavored. Also, I only used 1/3 cup sugar in the cake, since I like my cheesecakes sweet but not too sweet. Absolutely love the recipe - easy, super healthy and very tasty!

Moroccan Chicken and Whole Grain Couscous

Reviewed: Jul. 16, 2009
Can't believe I never reviewed this before!! This is one of my favorite recipes and I used it often. I use 1/4 tsp ground clove, tomato sauce, and sometimes omit the chicken for a quick and easy vegetarian dish. I also love it with chicken nuggets - I dip the nuggets in the sauce to give them extra flavor and a cool color! :)

Souvlaki

Reviewed: Jul. 13, 2009
I couldn't give a rat's whether these are authentic or not. All I know is that they tasted GREAT. I added a teaspoon of white sugar to the marinade and I used both chicken and pork - it was very good with a couscous salad (couscous, chopped feta, chopped tomato, chopped cucumber, olive oil and maggi). Thanks for an easy recipe, I'm going to use it often!

Famous Butter Chicken

Reviewed: Jul. 5, 2009
I used breadcrumbs, and baked it only 30 minutes with a little less butter than required. (Actually I used margarine) Also I used 1/2 a tsp salt and 1/2 a tsp garlic powder. It was tender but very bland, next time I'll use MUCH more salt and garlic, maybe 2 tsp salt and 1 tsp garlic. Thanks, this is a recipe with a lot of potential!
