About this Cook
I have a wife and twin sons who are currently 4 years old.
My favorite things to cook
Love to cook Italian, but my favorites take a while to cook so I rarely get the chance anymore. Now that we've had the boys, most dinners have to be quick and something they like. Fortunately, they love pasta.
My cooking triumphs
I've been able to duplicate some of our favorites from restaurants and from our childhoods.
My cooking tragedies
As I was setting the table for several guests, I discovered that the meat was over an hour undercooked.

Italian Holiday Pie
I halfed this recipe and served it at a Christmas party with friends. The ricotta made a very nice texture, with good flavor, but we did not care too much for the candied cherries. I think it would be just fine without them.

After-Thanksgiving Turkey Soup
This was awesome - we loved it, even me that rarely enjoys soup. I followed the recipe fairly closely, but added a few more spices. I made it one night but kept it in the fridge until the next night and it turned out very well.

Easy Chicken Rice Casserole
I have to agree with the other reviews; dry with not much flavor. My mom used to make something like this and I'll continue to look and/or experiment.
