Halibut Divine

Sorry, but this was not good for us at all. I followed the recipe exactly except for 2 things that should not have affected the final outcome - 1 tbs of dry mustard and used Tilapia, a very mild white fish. I reduced the dry mustard to 1 TBS and it was still too strong. I baked for nearly 30 minutes and the fish was still not done, had to nuke it to completely cook it thru. The olive oil/butter floated to the top so it looked a little greasy too. Sorry, won't be making this again.

BBQ Pork for Sandwiches

I didn't have beef broth, but had beer, so used it as CookingMama suggested; otherwise followed the recipe exactly. It's the only way I'll make BBQ pork sandwiches from now on! (Make sure you use a BBQ sauce you like- it could make it or break it for you)

Strawberries and Cream Bread Pudding

Fabulous! I used sugar-free strawberry preserves, put my bread in the oven at 200 to dry out (not toasted), and threw in an extra piece of bread and baked closer to an hour to ensure no sogginess. My parents owned a restaurant when I was growing up and customers came in just for my mother's homemade bread pudding. I never thought I'd have better bread pudding than Mom's... until now... :)

Pleasant Pork Chops

I was so disapointed after all the great reviews. I followed the recipe exactly and even added a little more garlic, but it was extremely bland. Maybe my paprika was old and lacking flavor, but I dont' think so. Presentation was nice, and it might be good for families with small children who turn their noses up at any strong flavor, but I won't fix this again for my family. Sorry

Pork Sausage and Cabbage Pitas

Personally, I give it 5 stars for flavor, but the rest of the family was very unimpressed. Scaled the recipe to 4 servings which allowed me to use 1 lb sausage and one bag of prepackaged cole slaw. I cut the red pepper flakes in half and very glad I did - still pretty spicy, but perfect for my taste. I thought the filling was so good that the pita was unnecessary - I enjoyed it as a one skillet meal.

Jollyrogers' Chilaquiles

Never heard of this dish before so I didn't know what to expect. Very very tasty, a little on the spicy side (from the chorizo), and not very substantial - more like a thick meatless chili. I followed the recipe exactly, used all the optional ingredients, but used shredded cheddar. I think I'll make this again, as it was very tasty, but instead not fry the tortillas (very labor intensive to fry them crisp, just to turn around and put them in a sauce to soften) OR use the corn tortillas to make enchiladas and pour the sauce over.

Korean BBQ Chicken Marinade

Very very good. I used this on pork and I know I'll make it again with chicken. As for chili paste, I used a hot curry paste I had on hand. It didn't seem very spicy so I added a little Asian chili sauce to taste.

Casablanca Chili

Three things I like about this recipe - it's VERY quick and easy to make, it's unique, and I love the sweet and spicy combo. Great way to use up leftover Easter ham. (okay, that's 4) :)

Brazilian Black Bean Stew

10 Stars!! Beautiful and Yummy!! I followed the recipe very closely - used 2 cans of Mexican tomatoes (diced tomatoes with diced jalapenos)in place of tomatoes and green chile peppers separate. I also doubled the mango, and so glad I did. Yes, this could be great vegetarian, but the few bites I had with the ham were even more delicious - I'll double the ham next time. I used ground chorizo and can't imagine making any substitutions like some others have (bought it at Kroger and have bought it at Walmart before, as well). If you use the chorizo,there is no need for chicken broth, there is enough flavor and spice in the chorizo and water is fine. If you have any doubts about this recipe, don't - it's sooo good!

Hot Mexican Spinach Dip

I'm a little torn on this one, wish I could give it 3.5 stars. This was good, I enjoyed it (liked it better with celery stix vs. tortilla chips) I think it could be a crowd pleaser, but I really don't see myself making this again.

Creamy Pesto Shrimp

This is basically Shrimp Alfredo with some pesto added to the sauce. I like shrimp alfredo and I like pesto, but now I know not together. When I decide to overindulge in so much fat and calories, I'll just stick with a simple rich and creamy Shrimp Alfredo- not this.

BLT Pasta Salad

Had some extra pasta after making Baked Ziti and just threw in some chopped tomato, aliced green onions, a couple slices bacon (cooked in microwave), and the ranch dressing. Eyeballed all ingredients for a quick lunch for hubby. He said it was the best pasta salad he's ever eaten!

Pork Chops Stuffed with Smoked Gouda and Bacon

When I first read the recipe it sounded like a great idea, even after stuffing the chops they looked beautiful, but somehow I kept thinking they were going to be bland. I decided to stuff a couple slices of apple inside as well. Glad I did, the apple was the only thing that gave these chops that something extra I was looking for. Won't be making this again.

Chocolate Brittle Surprise

This turned out great! But nearly every time I make toffee my butter separates, and cooking in the microwave was no exception. I think the people talking about it being "oily" or "greasy" might not realize their butter has separated. As soon as you see oil beginning to separate it is possible to quickly stir it back together, like I did. I've heard stirring in 1 TBS of VERY hot water can also help.

Baked Ziti I

This recipe is original and unique because of the sour cream, if you follow one of the top reviews which recommends ricotta instead...just go make a lasagna for heavens sake! I loved this, as is, just as the recipe states, with sour cream, but changed up the layering order as others have done. Hubby on the other hand, said he liked it, but thought there might be too much. If you don't love sour cream, maybe cut it back to 1 cup for a thinner layer.

Chicken Breasts in Caper Cream Sauce

Wow! Hubby couldn't stop talking about this dish, said it was like something you'd get in a restaurant, even used the word "phenomenal". And from the cook's perspective it absolutely couldn't have been faster/easier to prepare. Made some minor changes - 1/2 salt, 1/2 lemon pepper (not a fan), a little garlic in with the chicken, used a splash of white wine to deglaze the pan, and doubled the cream. Served it with a side of asparagus. Wow! Phenomenal!

Creamy Au Gratin Potatoes

It is bland comfort food, but I'd rather have good comfort food. Reminded me much of au gratin potatoes from the box. If you really follow the directions, 4 russet potatoes is not enough for the amount of sauce (I guess it depends on their size though), if I had used a 1 qt dish it would've overflowed (used 1 1/2 qt and it was to the top), and my cook time was more like 2 hours. The sauce was not as thick and creamy as I would have liked and needed more cheese. I have a few Au Gratin Potato recipes I like to use, this won't join that collection.

Smoky Roll Ups

This was...interesting. Not bad, everyone ate it, but it was a little weird. I don't think I'll make it again. I'd also recommend BBQ sauce instead of ketchup.
