Tater Tot Casserole IV

This is by no means one of my best meals I make, but I give this 5 stars because it is so easy and family friendly. My kids not only love eating it, they make it themselves. For 32 oz tots, I use 2 lbs ground beef, 2 cans soup, 2 cans green beans, and 2 cups cheese. Mix the meat, soups, and beans together; spread cheese over; top with tots.

Salisbury Steak

The family loved this, but because the gravy ingredients didn't look very appealing, I used Serena's advice and made gravy with dry mushroom-onion soup mix. This will go into the regular rotation.

Pretty darn good and so easy to make. Mine came out a little runny, but it didn't detract from the flavor. Warm with a scoop of ice cream, who cares if it's a little runny?

Cheese and Sausage Stuffed Zucchini

Sooooo good! Having said that I made some minor changes. I microwaved only 3 minutes, but will go the full 5 next time. I used all of the sausage, which fit nicely into my gigantic zucchini, but prepared only half the cheese mixture. I couldn't have put another spoonful on if I wanted to, so half was the perfect amount. When dinner was over I chopped it all up and ate it casserole-style the next day. Will definitely make this again!

Corn Dogs

These were good and surprisingly easy to make! I just dried the hot dogs with a paper towel - no flour or corn starch needed. I believe my oil was a little on the hot side at 375 (I fry everything at 375). They browned too quickly so I will definitely lower it to approx 365 as someone else suggested. Even at 375 they still came out wonderful.

Presentation 5 stars; healthy light summer meal 5 stars; flavor lacking. It wasn't bad by any means, but for all the ingredients and colors I expected a power punch of flavor, and it just didn't deliver. On the other hand, I believe it would have mass appeal for a church supper, pot luck, etc. If I made this again for my family I'd cut the amount of pasta in half to let the colors and flavor shine thru.

Best Tuna Casserole

I went into this hesitantly because hubby is no fan of casseroles and my teenage son would run if he heard the word "tuna", so nobody knew 'what' was for dinner. I placed it on the table, served it up, and it was hit with everyone and I know I'll make this again.

Grilled Thai Tenderloin Cutlets

Loved it! This will definitely fall into the rotation this summer and prepared again and again. I made only one substitution based on what I had on hand - I used a Thai Red Curry Paste (and slightly less) in place of the Chile Paste. Served with Creamy Dill Cucumbers on the side. Fabulous!

Blueberry Cheesecake Ice Cream

O-M-G!!! This is the absolute best most heavenly ice cream that I have ever made and ever eaten. Even my 13 r old said it was better than Coldstone. I used what was on hand - a quart of half & half, 1 cup cream, and 1 cup 2% milk (which I believe is basically 6 cups half and half). I used a can of blueberry pie filling and 1 generic brand graham cracker pie crust. Mmmm...Mmmmm...YUM!

This was just ok for us. I followed the majority and cut the spinach in half, but thought the spinach was its only saving grace and wished I had used it all. (make sure you squeeze all liquid from the spinach) Prep was too long and calorie count too high for such so-so results.

Grilled Blue Cheese Pears

This was good. I served it with grilled shrimp. There was something lacking, but probably not due to the recipe. My pears were not very sweet, will try a sweeter variety next time. (and there will be a next time) Also, the skin charred but the pear didn't soften as much as I would've liked. Maybe my heat was too high? and maybe brush oil or mixture on the skin as well.

We loved this! It was very easy to make with delicious results. I made a couple of changes - I used fat free Half&Half and was very pleased (1st time I ever used it), reduced the butter by half (3/4 c. seemed like far more butter than needed), and used reduced fat cream cheese. Even with these healthy changes it was delicious! I let it simmer for an hour, which I think made a huge difference in melding flavors. I also added a chopped, roasted poblano chile only because I had one. Very, very good!

Mediterranean Chicken

My college aged stepson was diagnosed with Diabetes yesterday and this was my first attempt at an ADA approved recipe. It was good, not great. I discovered I love Calamata olives! Yum! (never had them before) But I thought they were a little overwhelming for this particular dish. Maybe half next time.
