Blueberry Cheesecake Ice Cream

O-M-G!!! This is the absolute best most heavenly ice cream that I have ever made and ever eaten. Even my 13 r old said it was better than Coldstone. I used what was on hand - a quart of half & half, 1 cup cream, and 1 cup 2% milk (which I believe is basically 6 cups half and half). I used a can of blueberry pie filling and 1 generic brand graham cracker pie crust. Mmmm...Mmmmm...YUM!

White Cheese Chicken Lasagna

This was just ok for us. I followed the majority and cut the spinach in half, but thought the spinach was its only saving grace and wished I had used it all. (make sure you squeeze all liquid from the spinach) Prep was too long and calorie count too high for such so-so results.

Grilled Blue Cheese Pears

This was good. I served it with grilled shrimp. There was something lacking, but probably not due to the recipe. My pears were not very sweet, will try a sweeter variety next time. (and there will be a next time) Also, the skin charred but the pear didn't soften as much as I would've liked. Maybe my heat was too high? and maybe brush oil or mixture on the skin as well.

Ice Cream Sandwich Dessert Bars

Presentation was nice, but tasted like ice cream sandwiches with cool whip and fudge sauce. I think in the future I'll just hand out ice cream sandwiches.

Crawfish Chowder

We loved this! It was very easy to make with delicious results. I made a couple of changes - I used fat free Half&Half and was very pleased (1st time I ever used it), reduced the butter by half (3/4 c. seemed like far more butter than needed), and used reduced fat cream cheese. Even with these healthy changes it was delicious! I let it simmer for an hour, which I think made a huge difference in melding flavors. I also added a chopped, roasted poblano chile only because I had one. Very, very good!

Mediterranean Chicken

My college aged stepson was diagnosed with Diabetes yesterday and this was my first attempt at an ADA approved recipe. It was good, not great. I discovered I love Calamata olives! Yum! (never had them before) But I thought they were a little overwhelming for this particular dish. Maybe half next time.

Halibut Divine

Sorry, but this was not good for us at all. I followed the recipe exactly except for 2 things that should not have affected the final outcome - 1 tbs of dry mustard and used Tilapia, a very mild white fish. I reduced the dry mustard to 1 TBS and it was still too strong. I baked for nearly 30 minutes and the fish was still not done, had to nuke it to completely cook it thru. The olive oil/butter floated to the top so it looked a little greasy too. Sorry, won't be making this again.

BBQ Pork for Sandwiches

I didn't have beef broth, but had beer, so used it as CookingMama suggested; otherwise followed the recipe exactly. It's the only way I'll make BBQ pork sandwiches from now on! (Make sure you use a BBQ sauce you like- it could make it or break it for you)

Strawberries and Cream Bread Pudding

Fabulous! I used sugar-free strawberry preserves, put my bread in the oven at 200 to dry out (not toasted), and threw in an extra piece of bread and baked closer to an hour to ensure no sogginess. My parents owned a restaurant when I was growing up and customers came in just for my mother's homemade bread pudding. I never thought I'd have better bread pudding than Mom's... until now... :)

Pleasant Pork Chops

I was so disapointed after all the great reviews. I followed the recipe exactly and even added a little more garlic, but it was extremely bland. Maybe my paprika was old and lacking flavor, but I dont' think so. Presentation was nice, and it might be good for families with small children who turn their noses up at any strong flavor, but I won't fix this again for my family. Sorry

Pork Sausage and Cabbage Pitas

Personally, I give it 5 stars for flavor, but the rest of the family was very unimpressed. Scaled the recipe to 4 servings which allowed me to use 1 lb sausage and one bag of prepackaged cole slaw. I cut the red pepper flakes in half and very glad I did - still pretty spicy, but perfect for my taste. I thought the filling was so good that the pita was unnecessary - I enjoyed it as a one skillet meal.

Jollyrogers' Chilaquiles

Never heard of this dish before so I didn't know what to expect. Very very tasty, a little on the spicy side (from the chorizo), and not very substantial - more like a thick meatless chili. I followed the recipe exactly, used all the optional ingredients, but used shredded cheddar. I think I'll make this again, as it was very tasty, but instead not fry the tortillas (very labor intensive to fry them crisp, just to turn around and put them in a sauce to soften) OR use the corn tortillas to make enchiladas and pour the sauce over.

Creme Brulee French Toast

Update: I made this from memory (and surprisingly got all the ingredients right), but I just melted the butter with the sugar, didn't heat it til it the sugar actually dissolved. BIG big mistake! Make sure the sugar dissolves. Original: I made a few changes and I thought this came out GREAT! First, I melted the butter, sugar, and maple syrup in the microwave in the pan I intended to bake it in - one less pan to wash!. I reduced the sugar even further to 2/3 cup and found it to be perfect. Didn't measure the Triple Sec, probably double the amount tho. I followed Josie's advice and didn't use French bread and didn't let it sit. I actually used leftover hamburger buns (did not cut off crust and placed crust side down). This was even better later in the day and just reheated in the microwave. I'll definitely make this again!

Korean BBQ Chicken Marinade

Very very good. I used this on pork and I know I'll make it again with chicken. As for chili paste, I used a hot curry paste I had on hand. It didn't seem very spicy so I added a little Asian chili sauce to taste.

Casablanca Chili

Three things I like about this recipe - it's VERY quick and easy to make, it's unique, and I love the sweet and spicy combo. Great way to use up leftover Easter ham. (okay, that's 4) :)

Brazilian Black Bean Stew

10 Stars!! Beautiful and Yummy!! I followed the recipe very closely - used 2 cans of Mexican tomatoes (diced tomatoes with diced jalapenos)in place of tomatoes and green chile peppers separate. I also doubled the mango, and so glad I did. Yes, this could be great vegetarian, but the few bites I had with the ham were even more delicious - I'll double the ham next time. I used ground chorizo and can't imagine making any substitutions like some others have (bought it at Kroger and have bought it at Walmart before, as well). If you use the chorizo,there is no need for chicken broth, there is enough flavor and spice in the chorizo and water is fine. If you have any doubts about this recipe, don't - it's sooo good!
