Avocado Salsa

Got great reactions to this at work! I halved the recipe and used only 1 1/2 cloves of garlic and still kept the vampires away all day. Also added a roasted jalapeno and used lime instead of lemon since that's all I had. So glad I was lazy to go to the store and added oregano as the recipe stated instead of fresh cilantro. Ate this with my leftover beef barley soup (also from this website) - oh yum!

Debdoozie's Blue Ribbon Chili

Great recipe! Cold and raining, so I didn't feel like stopping at the store on my way home from work just for some chili seasoning. Searched the internet and found a perfect recipe for some. I had everything else in my pantry. Used 93/3 ground beef so didn't need to drain any fat. Added a roasted jalapeno and some fresh garlic; other than that, followed the recipe. I found it a little salty so added a little water. Thickened it at the end with some masa harina...GREAT!

Chicken Tikka Masala

Other than curry, I thought I wasn't a fan of Indian food...until I made this last night. I wish I would have read the reviews beforehand and added some garam masala since I actually had some with my spices. I warmed up flour tortillas from Central Market (the best!) and gobbled it up :P

This is really delicious! I doubled the recipe and just put two garlic cloves and it was more than enough. My friend at work said I could make it and sell it, but it does require a lot of chopping. Sure is eye appealing too.

This recipe deserves 10 stars! I used chicken broth instead of the water and chicken bouillon. I only made half of what the recipe calls for, but wish I hadn't, because I bet this freezes well. Will probably make another batch this week :)

Mom's Zucchini Bread

I'll be the 1156th reviewer :) Recipe made one meatloaf sized Pyrex and two minis. Sliced the small ones and hubby brought them to work and they all had great compliments. Why wouldn't they like it...it was free!

Rempel Family Meatloaf

Didn't get rave reviews from hubby, but he did say it tasted really good. I did give it four stars because he's the one that says meat shouldn't be sweet...what does he know? I tasted it and thought it was great. I used Club reduced fat cracker instead of butter flavored.

Beef Barley Soup

I used olive oil instead of butter and had about two cups of previously cooked chuck roast that I had in the freezer. I added a four cup carton of Swanson's beef broth, with only two cups of water. I added a Knorr beef bullion cube instead of 1 1/2 teaspoons of salt. Also added a drained can of corn. Followed a reviewer's comment to only add 3/4 cup of instant barley instead of a whole cup. Very tasty and will definitely make again!

Roasted Garlic Lemon Broccoli

This is just like a recipe my daughter found on the internet except that freshly grated parmesan is missing - it's key, so don't omit this. When you take it out of the oven, sprinkle about 1/2 cup and toss it in the bowl with the lemon juice. Lemon zest kicks it up a notch too.

Ono Butter Mochi

This recipe is very similar to a Portuguese/Chinese dessert our family calls "gooey cake". I too used a can of coconut milk (12 ounces) and used 2% milk for the rest to equal 3 cups. Don't be alarmed if the sides rise faster than the middle - after it cools, it settles. I had to cook mine about and hour and 15 minutes and had to cover it with foil the last 15 mins so it didn't get too dark on top. Turned out perfect, and I can't wait to get to California tomorrow for my Mom and daughter to try it!

Chicken Enchilada Soup II

I made this for a potluck and people were asking me for the recipe. I put in about 1/3 of the Velveeta block. Next time I'll just use 3/4 of a cup of the masa harina. Tasted great with the addition of the enchilada sauce I got from allrecipes too.

Hot Italian Giardiniera

This was really good. The oil hardens in the fridge so I have to put some in a bowl and defrost it in the microwave in order to eat it. Tastes really good though. Made a good salad with it (green leaf lettuce, tomatoes, cucumber, red onion, and feta with a precooked chicken breast) and added some French vinaigrette. Nice change to have a spicy, kicked up salad.

Mexican Wedding Cakes II

Awesome! I put one cup of chopped walnuts and one cup of sweetened flaked coconut that I toasted. Instead of leaving them round, I flattened them a little. You can put them about an inch apart because they hardly spread.

What a great recipe this is! The most time-consuming step was taking all the wrappers off the Rolos. Didn't have parchment paper, but using butter flavored spray on the cookie sheet worked just fine. Be patient in the cooling time...thought the chocolate would never harden.

Chocolate Brittle Surprise

These are so rich, but SO good! I used one whole sleeve of saltine crackers (37). After I spread the chocolate, I put sliced almonds on half and chopped pecans on the other. Took no time at all, and I know everyone that is getting some of these in their cookie tin are just going to love them!

Ten Minute Enchilada Sauce

This is a great recipe. I used "Fiesta menudo mix" from Kroger instead of chili powder, chopped garlic instead of powder, and chopped onions instead of onion salt. No extra salt needed. Update: Noticed my comments were altered since I mentioned I used this to put into a soup recipe from another website. I realized after my comments were posted that allrecipes has the chicken enchilada soup recipe too (Chicken Enchilada Soup II). Need to try it - fattening but so worth it!

Banana Crumb Muffins

Make sure you have milk in the house if you make these :) I thought the crumb topping made them too sweet, but I'm more of the savory type. Hubby loved them. I made one and a half times the recipe and it made 18 "cupcakes". Also I could have left the recipe as is for the crumb topping since I ended throwing some of it away because it was too much.
