Nutella ™ Cheesecake

I loved this! I followed the recipe. It probably chilled in the fridge for almost a full day before I tried any. Vey sweet and rich. I enjoyed it topped with whipped cream and a strawberry, with skim milk to drink. My husband wasn't too crazy about it - thought it was "too much" - but he doesn't particularly like Nutella or pie (he prefers cake & brownies). My 2 year old & 4 year old boys enjoyed it!

Pesto Squash

Is it OK to give something so simple 5 stars? I had a leftover zucchini and just wanted a new idea for seasoning it simply. I peeled and cut the zucchini into chunks, then put it in my steamer for about 10 minutes - still had some nice firmness. The pesto and fresh grated parmesan gave it a nice flavor. Will definitely be remembering this idea for the future. Thanks!

Cottage Cheese Roast

How the heck can this concoction be so darn good? My husband really liked this one. He was surprised at how much it resembled meatloaf - especially after I told him the ingredients. After reading reviews, I used 2 1/2 cups of cornflakes. I also cooked the roast for 65 minutes, then let it sit for 30 more minutes before serving. I don't think I'd change anything else, except perhaps I might chop up a little bit of veggies to go in it - like red pepper. Neither of us thought it was too salty. That onion soup flavor did stay with me throughout the evening, though. Oh, yeah, even my 2 year old liked this!

Allie's Mushroom Pizza

So yummy! I thought the sesame oil added great taste! I sauteed the spinach and mushrooms in olive oil with some garlic first, then put that on the crust. On top of the cheese I added a few extra chopped veggies from what I had fresh on hand. You can adjust and add whatever toppings you like.

Stuffed Green Peppers

Really good! I might try it with red peppers next time. I used the leftover filling (the original recipe must have used bigger green peppers than I could find) for burritos the next night.

Mom's Zucchini Pie

Yum! I liked this a bit better than my husband, but he still enjoyed it and said he'd like to eat it again. I brushed the crust with dijon mustard. I also added some green and red pepper.

Alice Chicken

We loved this! We didn't use a full 16 ounces of the honey-mustard salad dressing - more just poured a bit over to taste. Another reviewer suggested adding sundried tomatoes - I might try that next time.

Creamy Pesto Shrimp

My 4 year old loved the noodles (although he wouldn't touch the shrimp). I used half & half instead of heavy cream. I also sauteed some garlic in the butter before adding the cream. I think I might have used a little extra pesto, also. Another reviewer mentioned adding sundried tomatoes - I might do that next time or just use sun-dried tomato pesto.

Connie's Zucchini 'Crab' Cakes

Another native from Maryland, I didn't really feel these tasted like genuine crab cakes, but I didn't expect them to. My husband described them as "vegetable crab cakes". I used 1/2 cup extra bread crumbs - might use a bit less next time as I thought they were just a little dry. I squeezed the liquid out of the zucchini like many others suggested. I liked dipping them in a lemon-herb tartar sauce. Next time I might try adding a little red pepper or carrot

Easy Vegetable Pot Pie

Yum! I added an egg and a little cheddar cheese to the filling. Some things I might try in the future that other reviewers suggested - using a different cream soup, making a whole wheat crust, or using fresh steamed veggies.

Delicious Black Bean Burritos

These were quite good! I used 3 cloves of garlic. I think I also sauteed a bit longer than the recipe called for. I also added some chopped tomato and I might add a can of Rotel tomatoes with chilis next time.

1-2-3 Vegetable Chili

My husband and I enjoyed this quite well. Very filling. I added an extra tablespoon of chili powder. I chopped up the zucchini rather than just halved slices. I did add an extra can of beans - I asked for Kidney beans, but my husband brought home pinto. It still tasted fine. One thing that I did do, just out of curiousity - another reviewer mentioned adding a dash of cinnamon - that was the only thing about the taste that we didn't like, so we won't be doing that again. I added a bit of chopped jalapeno for extra kick. Really good with corn chips or tortilla chips.

Gourmet White Pizza

My husband and I really enoyed this! Next time I might try artichokes instead of chicken, like a previous reviewer mentioned. Also, while we love garlic, 3 tablespoons of fresh minced garlic was just a little much for us. We'll probably use a bit less next time. My mother-in-law will love it with all that garlic, though!
