Caribbean Grilled Crab Cakes

These crab cakes were very easy to make, and absolutely delicious! I used 1lb fresh canned crab meat, but it was the crab meat from the 'claw', which is less expensive but was still just as good. For a healthier version i crushed up whole wheat saltine crackers very fine in place of bread crumbs and used light mayo, and just a heaping tablespoon of it. I probably could've gotten away with even less. 3/4 cup definately would've been way to much mayo. Aside from those changes, I followed the rest of the recipe as was. I cooked them in a pan on top of the stove in olive oil. Perfect! The mango salsa was phenominal, i used 2 mangos and 1/2 of a red onion, then followed the rest of the salsa recipe as was. This recipie served 3 adults in my opinion, if you have a big household of alot of hungry people, definately double it! I will definately make this again, sooooooooooo good! And easy!!!

Baked Pork Chops I

These pork chops were PHENOMENAL!!! I used crushed up fried onions instead of bread crumbs. I only cooked them in the olive oil 3 min per side because they were browning fast, then I baked them for 20 minutes without the sauce, 40 minutes with. I also used skim milk and 98% fat free cream of mushroom soup, and they were amazing, fell right off the bone! I served them over basmati rice. I will definately be making these again!!!

No Bake Chocolate Oat Bars

These are so easy to make, and DELICIOUS. Everybody loves them. I made them for christmas, something a little different from the everyday cookie, and they were quite a success.

Baked Soy Lemon Chops

I was a bit leary about this at first, because after mixing the marinade together it was a bit salty because I didn't have any low sodium soy sauce, but I gave it a go marinading the chops overnight. I also added a 1/2 tsp. of ground ginger. I didn't baste the chops as they were baking because they were already covered in the marinade. When they were done, I was pleasantly surprised. The meat was falling off the bone, they were delicious and everyone agreed. They weren't to salty, but for health reasons I'll use low sodium soy sauce next time. And there will definately be a next time!!!

Balsamic-Glazed Salmon Fillets

I had all the ingredients already on hand (except the salmon, had to go out and buy that!). This dish was not only easy, but incredibly delicious! This is a keeper, and I'll be making it again and again and again!!!

Chocolate Mint Cookies I

I'm giving these cookies 5 stars because everyone who ate them loved them, although I'm not a big fan of Mint, but I still new they made a good cookie. The only thing I'd recommend is that if your packaging them with other cookies, they give the other cookies a minty taste, so I would just package them alone. Made a great christmas cookie!

Buffalo Style Chicken Pizza

This pizza was good, I think it'll be better the next time I make it, and I'd definately make it again. I feel that I should've cut the chicken up smaller, the chunks were kind of big. My daughter felt that the 8oz. of blue cheese was to much, next time I'll use a little less, like 4oz., I don't think my crust was quite 16in. I used pillsbury pizza crust that you just rolled onto a cookie sheet (making my pizza square, which was good). The crust was great, I'd definately use that again. I will definately make this again, the next time it should be a 5 star pizza!

Szechwan Shrimp

This was so delicious. Like many others, I doubled the sauce, and used raw shrimp. I served it over jasmine rice. The sauce was so good. I used medium shrimp, next time I'll use large. I think it would be good over angel hair pasta as well. Whether you use shrimp or chicken, its the sauce that makes this meal. Just the sauce over the plain rice was incredible. Will definately make this again. And again. And again! Part II, I made it again, this time with chicken, equally as delicious. I served it over brown rice, it was great! I'm a garlic lover, so I always add extra garlic. Superb!!!

Lemon Garlic Tilapia

Delicious and healthy. I used my garlic crusher and crushed the fresh garlic, evenly spreading it on top of the fish. I also used light butter (I always do, Kellers and Land O Lakes light butter is very good). This, along with the lemon juice, parsley, and black pepper made for a very good meal that was also easy and quick to make. I followed the baking time to the T, and it was perfect!!!

Aunt Teen's Creamy Chocolate Fudge

The only reason these are getting 4 stars opposed to 5 is because they so didn't turn out, but I think it was my doing, and I could tell they would've been great had I not done something wrong, which I think I added to much evaporated milk, so the fudge didn't set to where they could be cut into squares, so we ate it with spoons. It was thick and gooey, very tasty, just not properly settled. Like i said, I'm pretty sure it was my doing. I'll have to try again!!! Update... One year later... Again I made this for Christmas, following the directions to the T, and PERFECT. I had accidently used the entire can of evaporated milk the last time, which is why it hadn't set, but this time I used the correct amount and it turned out wonderful, and so easy to make!!! 5 Stars!!!

Cheesecake Topped Brownies

These were really good. The cheesecake topping was excellent. I made them for my daughters party at school, and the kids loved them. I tried one myself, and I must say they did have some flaws. I gave them 5 stars because I'd definately make them again, but there are just a few things I'd do differently. Firstly, the cheesecake was done, so I took them out. Cutting them later that night was when I realized the brownie wasn't done. My daughter thought they were supposed to be that way and referred to them as 'brownie batter cheesecake bars'. Next time I'd make the brownies 'cake like' opposed to 'fudge like'. I also found the frosting to be unnecissary. They'd be fine without it. Will definately make again!!! Valentines Day, made again. I made the brownies cakelike (3 eggs instead of 2), and they turned out perfect. This is a delicious easy recipie, a real crowd pleaser!

Christmas Breakfast Sausage Casserole

Award Winning Soft Chocolate Chip Cookies

These cookies were great, they were soft and moist. I followed the recipie exactly, and they turned out perfect. I will definately make them again!!! 2nd time: Still phenomenal, and another reason I like this recipie is that it makes so many!!!

Crab and Swiss Quiche

Very good, it was a hit at the party I made it for. I did adjust the recipe though. I sautaed 1/2 a package of frozen chopped spinich with 1/4 cup of chopped onion, 4 oz. of sliced mushroom, and 2 tablespoons of chopped garlic. I used 3 eggs because thats what many viewers suggested. I used the crab and swiss as directed. Not only did this dish taste great, it looked pretty as well. Would definately make again.

Banana Crumb Muffins

These muffins were excellent! The only thing I did different was add 4 banana's instead of 3 only because that's how many banana's I had and I wanted to use them up. They were so moist, so flavorful, the topping was perfect. They are by far the best banana muffins I've ever had. I didn't mash the banana's before adding them to the sugar, butter, and egg, I just sliced them into large coin size peices and added them to the sugar, butter, and egg, and beat them together with the mixer to save some time, and that worked out just fine. This recipe is a keeper, and I'll definately make them again!!!

Banana Banana Bread

This banana bread was easy and delicious. I had all of the ingredients already on hand. I didn't have a loaf pan, so I baked it in a 9 inch bunt pan and served it sliced. I followed the recipe exactly except I added one cup of semi-sweet chocolate chips. It was very good. Next time I'm going to leave out the chocolate chips and add chopped walnuts. I think that will be even better. I don't have another banana bread recipe to compare this to because this was my first time making it, but I can say that if your looking for a super moist bread that is packed with banana flavor, this is the bread for you!

Seven Layer Taco Dip

Best taco dip I ever had. It was a big hit at the party I took it to. The only thing I'll do different that I read that another viewer had done was beat the taco seasoning with the sour cream and cream cheese rather then with the refried beans. I think that will work better. Even still, a great dip, and I'll definately make this again and again!

Good Old Fashioned Pancakes

While these pancakes were good, I didn't think they were much different from Bisquick pancakes. If I do make these again I'd probobly add 2 teaspoons of vanilla and 2 tablespoons of sugar instead of one and a 1/4 cup more milk. I had already halved the salt. Very good, just not GREAT!, but I'd make again.

Too Much Chocolate Cake

Excellent, a huge hit! Everyone loved it! I made it in a 9 x 13in pan and topped it with vanilla cream cheese frosting and it was incredible, and so easy. I couldn't find 5.9 oz package of pudding, so I used one and a half packages of the 3.8oz, and it was fine, but I think even one 3.8oz would have been fine as well. I will definately make this again and I highly recommend it!

Tandy Cake

I was initially leary of this recipe because I don't feel that the picture makes it look very appetizing, but then I notices a better pic under the 'related photos' and decided to give it a try and I'm glad I did. It turned out really good, it definately turned out like a homeade version of the Tastycake brand. I used a 9 x 13in. pan instead, I also didn't measure the peanut butter I just spread it on evenly when the cake was right out of the oven, using Reese's brand peanut butter. I melted 5 hershey bars and that was perfect, and it spread smoothly. The cake was very moist. I waited untill the cake was room temperature untill I cut it because the chocolate was to hard right out of the fridge. Next time I think I'll use the 10 x 15inch pan to make this more of a bar type dessert. This recipe's a keeper, will definately make again! Thanks, Rebecca!
