Pinto Bean Zucchini Boats
I used Cucumbers instead of Zucchinis, and I used tomato paste instead of tomato sauce. I boiled my own pinto beans too. It came out bland, so I used oregano, and salt and it was acceptable. It’s okay for a vegetarian dish, but still kind of bland.

White Wine Almond Chicken
chicken wasnt what i was expecting. It turned out very tender and delicious! I think i added too many nuts though... but didnt matter too much. good recipe!
