Quick, easy and healthy! I tend to gravitate toward the pasta side of things, but have been making more vegetables to up the nutrition on our diets. I like baking too!

Best Chocolate Chip Cookies
Alright - I don't know what I did wrong! I followed these directions and mine came out hard. Not burnt - just hard. I baked the first batch for 21 minutes, and the second for 15 minutes and they were still hard. The third I put in for 12 minutes and they turned out hard-ish. I even got a fourth batch out of it, put it in for 10 minutes and they were okay, but the taste also wasn't the best. I feel like I wasted several batches of cookies! Grr! But I'm assuming it's something I did, I just wish I knew what it was!

Guacamole Chicken Melt
This was really yummy! I didn't have a few of the ingredients on hand, such as the Creole-type seasoning. I just cooked the chicken in olive oil and sprinkled some sea salt on it. I really liked how the guacamole adds a creamy texture to the meal! I also didn't have any cheese and ate it with out, and it was still very tasty. A great quick meal.
