I have made these several times now. I had never made ribs before so was thrilled when my New Years Eve crowd went nuts for them. I baked them early in the day and refrigerated them in the foil tehn grilled them 15 minutes before guests arrived. What a wonderful recipe.

I used a little less cottage cheese and added 1/2 cup of milk - thought of cottage cheese in it scared me a little - and I am a cheese fanatic so I added a little extra cheddar. I used half Panko and half seasoned bread crumbs for my crumb topping. My family went nuts for this - I really liked it and I usually can't stand the thought of eating mac & cheese. A keeper in my book!

I used a fajita seasoning on the meat mixture and Rotel. I didn't have Ranch beans so subbed black beans. A great recipe to modify to your own taste. Awesome!
