Blue Cheese, Bacon and Chive Stuffed Pork Chops
The filling is yummy, but my husband and I both agreed it belonged more in a quiche, omelette, or stuffed in chicken; the pork just didn't taste right with it.

Oat Applesauce Muffins
I just pulled mine out of the oven, and they're very good. I used Wild oats and Homo milk as I didn't have the others on hand, and I added a dash of cinnamon and Mexican vanilla, but I followed the baking instructions exactly. They are very moist and tasty.

Eggplant Parmesan II
I layered this with some breaded chicken thighs I needed to use up. My husband loved it, and demanded I make it again soon.
