Poppy Seed Chicken

Changes: 1 tbsp sherry, 20 ritz crackers, lite sour cream, 1/4 cup butter. With foil in place it wasn't heating, still barely warm after 30 mins! Therefore, leave uncovered. Soooo good!

Miniature Chocolate Eclairs

Delish! However, the icing needs major changes. Half the conf sugar and triple the chocolate. Its was so dry I couldn't even stir it, so added milk and chocolate the make it smooth and creamy. Ended up great, got rave reviews at the party!

Mocha Angel Food Torte

This is pretty good! I used fat free half and half to make it more creamy, and low fat cool whip to decrease the fat content. Also, I decreased the coffee granules to 1.5 tsp and so glad I did, a tbsp would have been way too much for my personal taste. With 1.5 tsp it had a slight, but not overpowering coffee flavor.

Sweet and Spicy Sweet Potatoes

WOW! So good! I increased the amt of olive oil, afraid they would be too dry. However this was unnecessary, and mine ended up too oily. I also doubled the amount of brown sugar and I'm glad I did, they were perfectly sweet!! So happy I found this recipe!

Corned Beef and Cabbage

Great! The only change I made was to not put the carrots, cabbage and potatoes in the pot. I was afraid they would cook too much and be mushy. So, I just cooked them in a pot on the side with some of the broth from the crockpot. Also, I also had to use extra water (5 cups) to cover the meet. Got rave reviews!!!

Apple Pie by Grandma Ople

WOWZ-A! SOO good! I sifted thru all the reviews to see the changes ppl made. But ultimately I followed the recipe exactly (including cooking temp, amount of sugar, type of apple, etc) except to add 1/2 tsp cinnamon to the sugar mixture and it was AWESOME! I didn't have any trouble with the crust cooking right, just put the pie on the bottom rack and the bottom crust will cook without the top crust over-browning. Yum- best apple pie ever.

Saucy Chops II

Delish! AND made with on-hand ingredients. It doesn't claim to be fancy, just simple ingredients for a simple down-home cookin' taste. I doubled the worcestershire sauce, and it turned out perfect!

Strawberry Tiramisu for Two

Wee didn't enjoy this at all! There was way too much of the cream spread, i only used about half of it. And the strawberry puree was not sweet enough, so it was blah. Just overall kinda soso. Sorry, but I won't be making this again.

Southern Peach Cobbler

Fantastic! I used peaches that were no where near ripe, but they cooked and were just as juicy and soft as they were supposed to be. The topping was delish! It was a little more crust- like, and a little less cake-like, which is exactly what I wanted. I think the sugar/cinnamon sprinkled on the top made all the difference. Mmmmm, I'm gonna go get another piece!

Spaghetti Italian

This was a good recipe! Easy and quick. It wouldn't feed six adults, though, not by a long shot! My only complaint was that it was a bit thick, might add a half cup or so of water to thin it out a bit. Cooked it for about an hour and a half, gr8 flavor!

Kinda too sweet. I decreased the amount of sugar in the topping after reading other reviews, but next time I'll also decrease the amount of sugar in the cream cheese mixture to maybe 3/4 of a cup.

Grilled Tilapia with Mango Salsa

I followed the recipe exactly, except to toss a handful of diced strawberries into the salsa, and it was delicious! The only thing I would change next time would be to decrease the amount of jalapeno, it was a trifle spicy for me, though my husband thought it was perfect!

Egg and Sausage Casserole

The only changes I made were to add 1/2 finely diced onions to the sausage, and a half cup of milk to the egg mixture (it would have been dry without it). Oh- and I halved the amount of cheese called for because of reading other reviews. It was good, but next time I'll only use 1/2 lb of sausage, it was a little too meaty. Or- use more eggs if I need to feed a lot of ppl. I might also add spinach or bell pepper to make it taste healthier. ;)

Veggie Pizza

Took it to a party, and ppl gobbled it up! The crust needs to bake a little longer than called for. Maybe 12-13 mins, at ten mins it was still doughy and 15 made to crust crunchier and fall apart. Needs to go till its just barely a hint of gold... Also, next time I'll use mayb 3/4 of the ranch packet.

Blueberry Buckle

This was good! It's really more of a coffee-cake than a dessert. Next time I'll prob double the amount of blueberries. I also added a tsp of vanilla and substituted butter for the shortening.

Toffee Bar Brownies

Wow- super sweet! We all liked them, but agree that they are almost too sweet. Next time I will use half the amount of cool whip and candy bars, which will help. Tip- make several hours ahead of time to give this a chance to cool in the fridge, much better that way.
