Chocolate Chocolate Chip Cookies II

These were excellent. I was out of brown sugar and had to use yellow golden sugar in its place, but they still turned out. I rolled the dough into smallish balls and didn't flatten them -- so the centre stays soft. I recommend these ones for sure.

Fettuccini Tomato Rustica II

This was amazing. I added 1 cup of red pepper tomato sauce and some (about 10) tiny baby pearl red onions to the chicken. I used goat cheese instead of feta and lemon pepper fresh linguini. Such a yummy combo. Dinner guests loved it up! Cook the chicken a day before so meal prep will be extra speedy if you have guests.

Fourteen Carat Cake

This made a really nice birthday cake for my daughter. I made it with vanilla cream cheese frosting. She loved it. I used my convection oven and needed an extra 15 minutes to cook through. I used a bundt pan.

Curried Zucchini Soup

Zucchini Soup has an amazing consistency and texture about it. It isn't grainy like potato-based soups can be. I find using a white onion is a must and I replaced the curry powder with thyme. My daughter is crazy about it. I add grated cheddar for her. This is a really nice soup. Some reviews suggest adding cream or milk but I prefer it as recommended. It freezes better this way.

Zucchini Risotto

I've tried many types of risotto but I hadn't thought of doing it with zucchini. This is great as a side dish with chicken breast. I served this with tomato chutney. Added two tablespoons of hot chilies to the recipe.

Thai Green Curry Chicken

I don't include flour or soy sauce when making these curries. I like the lighter taste you get that way. I doubled the green curry. This dish is super easy to make and great if you don't have a lot of time.

Chocolate Banana Bread

So this is the best banana bread I've ever had! I think it must be the cocoa and sour cream that make the difference. It came out beautifully. If you only want a small loaf that will keep fresh, I'd recommend cutting the recipe in half. I like that this called for so many bananas, in case you have a bunch that are over-ripe.

Avocado Salad

This sounded like a good idea and I had lots of ripe avos to use. I added 1/2 cup of feta cheese, 1 cup of diced chicken breast, 10 strawberries, 3 chopped scallions, on chopped Fijian apple and some grapes. Served it as a meal on top of fresh spring lettuce. Very tasty. The avo becomes like a creamy dressing when you stir the salad.

Cowboy Cookies III

I should have read the other reviews before cooking these. I found the first batch flat so I added a tsp of baking powder and some shredded coconut. They tasted great, but I'd look for other recipes before using this one again.
