Flavorful Sugar Snap Peas

I followed the recipe pretty closely except that I eyeballed the measurements in my rush to get this cooked quickly. I thought the thyme would be too much, but it ended up being wonderful. I did sub olive oil for the veg. and season salt for the salt & pepper. I will be making this again!

Two Ingredient Pumpkin Cake

I first heard of this recipe at a Weight Watchers meeting. You can make this into mini muffins and they only count as 1 point each. My daughters really love them. This does work well with other flavors of cake mix, so experiment and see what you like best. We've added mini chocolate chips before and that is delicious as well. I will note that these can be a little sticky when leftover for a day or two.

Sunday Best Fruit Salad

My whole family really liked this recipe. The best part? My 7 y.o. made this by herself with the exception of me coring the strawberries and peeling the kiwi. We decided not to garnish the salad with the kiwi and strawberries. My dd just threw it all in the mix. Yum!

Sweet Potato, Carrot, Apple, and Red Lentil Soup

This is SO delicious! I made a few of minor changes. I used 2 Tbsp. butter and 2 Tbsp. olive oil. I used regular lentils since I didn't have red and powdered ginger instead of fresh. I halved the pepper and really would be fine with omitting it. I used Greek yogurt to top the soup (tastes like sour cream to me). This is a hearty, filling, delicious soup! The leftovers are just as good as the first serving.

Chocolate Cupcakes

My 7 y.o. daughter and I made these for a church event. We thought they were so delicious! Definitely do NOT fill the cups more than 1/2 full! We got 24 normal-size cupcakes out of this. They taste almost brownie-like, so if you want a cake-like mix, this may not be for you. We topped them with the Quick and Almost-Professional Buttercream Icing recipe from this site. I was also pleased with how low-fat these are.

Slow Cooker Cream of Potato Soup

Made some small changes. I used 5 large baking potatoes (seemed like a lot). I also replaced some of the water with a 32 oz. carton of vegetable broth (thought I was adding chicken broth) and then topped off with water and 1 bouillon cube per cup of water. I went easy on the salt since I was adding broth and I omitted the pepper since I don't like it. Make sure you let the soup cool a bit or it may explode from the blender! This soup is amazing!! My 7 year old had FOUR servings!

Rich Chocolate Frosting

This is very good. I cut the recipe in half. I ran out of confectioner's sugar at 4 cups instead of 4 1/2 cups, so mine may have been a bit more chocolaty. It is so creamy and my husband really liked it (I put it on his birthday cake). My kids really love it, too. But what we REALLY love about it is dipping bananas in the leftover frosting. THAT is delicious!!

Pizza On The Grill I

I have to admit that I don't follow the toppings. I only use the recipe for the crust. We grilled it over a low flame the second time and that worked better for us. We use a pesto for the sauce and throw on whatever toppings we desire. Our extended family raved about this pizza (and I believe the crust was a huge part of that compliment!) Thanks!

Cheesy Turnips and Carrots

I received a bunch of turnips from my CSA and didn't have a clue what to do with them. This recipe is wonderful! I didn't have any celery, so I subbed two stalks of swiss chard since my CSA gave me that as well (without a clue what to do with it either!). I used skim milk and 2% cheddar. Delicious! (Additional note: I didn't get much water from the veggies and the sauce's thickness was perfect).

Easy Ice Cream Cake

I'm not a big fan of ice cream sandwiches, but this is really good and my family loves it. I bought Great Value (walmart) sandwiches: one sugar-free and one regular. I also used light GV whipped topping. I ended up using 19 i.c. sandwiches in all. I also forgot to buy the chocolate bar, so I used my Pampered Chef grater to grind up some chocolate chips and that worked perfect. This is addictive stuff!

Decorator Frosting

So easy and delicious. I mixed this up and then put some in smaller bowls to add different food colorings to. I gave the kids at my daughter's party craft sticks to spread the frosting with and they decorated cookies. What a hit!

Teddy Bear Biscuits

I didn't actually taste these, but the girls (7-9 years old)at my daughter's sleepover all loved them. They had so much fun forming the bears (and other designs) and raved that it was the most fun they'd ever had at a sleepover. Thanks for the cute idea. It was a huge hit!

Strawberry-Banana-Peanut Butter Smoothie

This isn't a true rating of this recipe since I subbed a couple of things. I used Greek non-fat yogurt because it's what I had. I also used almond butter because I am trying to finish off a jar. It did not overwhelm the smoothie like some people said about the p.b. I actually had more of the Greek yogurt flavor/texture going. My whole family loved this!
