Veggie Lasagna

I've got to say it wasn't one of my favourites. If I'm going to spend time layering, I'd use a different recipe.

Asparagus Avocado Medley

Reviewed: Mar. 26, 2009
I just got home from the grocery store and bought asparagus (on sale) and three 1/2 price avocados from the marked down bin. I decided to skim through some recipes and I'm sure glad I did! This dish is fantastic! I used regular mustard and pureed garlic from a jar and it still turned out great. And so easy to make!

I loved this recipe! So easy to make and nice and crunchy without the added oil. I'll make this again.

Homemade Crispy Seasoned French Fries

Reviewed: Dec. 21, 2007
Just what I needed after a really bad day! I made them as directed and they were just as good as store bought or restaurant fries. Next time, I'll spice up the batter a little more but overall, a decadent treat after a long day.

Kidney Beans and Corn

Excellent side dish or even as a vegetarian meal. I omitted the green pepper because I don't like them but the seasonings with the beans and corn were delicious. It's now a standard dish in my house.

15-Minute Marinated Chicken

Reviewed: Nov. 28, 2007
I really, really like this marinade recipe. I used it to bake boneless chicken breasts in the oven. I added a bit of water to the bottom of the dish so it wouldn't dry out. It made the chicken very tasty and with no oil used, it's still very low in fat.

Chocolate Caramel Brownies

Reviewed: Oct. 18, 2007
I had a bit of trouble with this recipe. Firstly, I live in Canada so the measurements are different and this caused a problem. I bought one package of chocolate cake mix but didn't think to convert it to oz. because I figured a package is a package. NO it's not!. It takes two packages at 266g to make this recipe. When I saw how much batter I had to work with I knew I'd messed up. I figured the brownies would thin but just as delicious. I could probably have put it into an 8X8 pan but I had too much melted caramel sauce. Anyway, it turned into a gooey dessert served in bowls with ice cream and was a hit none the less!

Absolutely yummy! I had an open can of evaporated milk so I used that instead. So good!

Rosemary Pork Roast

Reviewed: Sep. 22, 2007
I added dijon mustard to the glaze & used fresh rosemary since I grow my own. The glaze crusted up beautifully and the flavour was fantastic! It works great on baked pork chops too. This is going to be my regular glaze for pork roasts from now on!

Garlic Roasted Chicken

Reviewed: Sep. 22, 2007
Very moist and tender chicken.I used a smaller chicken and substituted a bit of lime juice for the lime wedge. I took an idea from another garlic chicken recipe and made slits in the chicken and placed half cloves are garlic in each slit. It really added to the flavour of the chicken, especially the next day for sandwiches. I added some extra spices to the gravy because I like a lot of flavour but overall, this is a good recipe for a flavourful roast.

Baby Carrots And Brussels Sprouts Glazed With Brown Sugar and Pepper

Reviewed: Sep. 22, 2007
I loved this dish! I did what another reviewer did and cooked the veggies in the microwave first, then transferred the carrots and sprouts to an oven proof bowl, poured the glaze over top, put the lid on and heated it in the oven while I prepared the rest of the meal. I'm not a huge fan of brussel sprouts but these are delicious.Very quick and easy.

Beef, Burgundy Style

Reviewed: Sep. 20, 2007
I thought this was very tasty but I found the sauce a bit thick. I followed the recipe to a 'T', right down to the demi glace. The flavour was wonderful but since I only cook for myself, it was a heavy meal to have two nights in a row.

I made this last week but substituted cream of mushroom for the soup and bulgur for the rice. It was easy and tasty.
