Linguine with Cajun-Spiced Shrimp and Corn

The eight ingredients starting with the garlic should be mixed together and let sit overnight in the fridge to marinate, the oregano should be 1 tablespoon not one teaspoon (don't be afraid as it mixes through). The entire mixture should be heated through with the melted butter and proceed with the recipe. The garlic and red onion should not be cooked until translucent as this dulls the intensity of the garlic and red onion changing the final flavor. Also shouldn't take as much time as recipe states.

BAKER BEWARE: I have always scorned my children and husband for eating raw cookie dough because of the eggs, I couldn't help MYSELF with these! I got exactly 24 cookies baked out of this batch after eating several tablespoons of the dough before they were put on the cookie sheet. GREAT recipe! Thanks for sharing, I'll have to add another 15 minutes to each daily workout, because you really can't say no to these cookies!

Wicked Garlic Tofu Saute

This is wonderful. My 3 and 4 yr olds loved the "square eggs" as they called it. And my 13 yr old tried tofu for the first time when I made this dish and he says he doesn't mind eating vegetarian meals like this! Great recipe, thanks for sharing it with us.

Authentic Louisiana Red Beans and Rice

The andouille is a MUST for this to be authentic, Jacob's world famous andouille ships and is worth it when you can't get it locally. Also try vegetable oil instead of olive oil, it gives a different taste and instead of cooking the garlic first, throw it in during the simmer process to avoid the 'nutty' flavor of it frying, increase the bay leaves to 4 or 5 and use oregano instead of sage & thyme. When completely cooked the beans should be very soft with a creamy consistency, use the back of a wooden spoon to smash some of the beans against the side of the pot as you stir them. EXCELLENT, also try serving with a bottle of pickled peppers at the table, sprinkle a little of the peppers vinegar on the beans for added spice.

Roasted Beets and Sauteed Beet Greens

My husband prepared fresh beets using this method and we all enjoyed them very much. He usually doesn't eat canned beets and when we came across them in the produce section it provided us with a change. Unfortunately the greens were already detached, but we will look for them next time as my husband is bound and determined to get me to try some sort of greens. Thanks for sharing!

Beef Stroganoff III

I served this over garlic mashed potatoes for a change of staples and my husband battled over getting a second serving even though he knew he shouldn't. He liked it so much, he changed his mind about getting lunch out at work and brought leftovers for lunch today. This was a hit with my whole family. Thanks for sharing!

Thai Chicken Wings

This was a good snack, but was missing the kick that we like. I halved the recipe and added 1/2 cup of OJ and 1 tablespoon Sriracha. Substitued the wings with 1 lb cubed skinless boneless chicken browned in olive oil with black pepper and tossed with cooked glass noodles to make a full meal. There was none left to take to work for lunch the next day. Excellent!
