Zucchini and Potato Bake
Loved all the flavors together, the crispier the better in my opinion. I will be making this time and time again. Oh and it doesn't hurt that it took me like 5 minutes to prepare!

Slow Cooker Chicken Taco Soup
nothing too special but pretty good. I did leave out the beer so maybe that was what gave it that something different. Did enjoy though

Black Bean and Rice Enchiladas
i might try to use corn tortillas next time. The flour ones got really doughy after i cooked them. Otherwise pretty good
