About this Cook
My favorite things to cook
I like quick, well-balanced meals that are fairly easy to prepare. I lack the experience, confidence, and creativity needed to "whip" something up from whatever is in the pantry, so for right now I follow recipes religiously.
My favorite family cooking traditions
Growing up we always had nice Sunday dinners at my grandmother's house. It's a tradition I hope to carry on one day. Other traditions include pork and saurkraut on New Year's day, having a glass of blackberry wine on Thanksgiving morning while watching the parade, and many others.
My cooking triumphs
I make a mean southwestern stuffed pepper, haha.
My cooking tragedies
I've had a few tragedies...It's part of the learning process!

Baked Corn Pudding
Flavor was good, however, texture was a little weird to me. I had to cook it longer than specified (I baked it for 55 minutes). It came out a bit gelatinous and had a watery separation when I spooned it into a bowl. Don't know what caused this; I followed the directions exactly as written. I might try it again with condensed milk as someone else recommended.

Drunken Collard Greens
I had never cooked collards before but I like how this recipe turned out. I had to make some substitutions since I did not have everything on site..I used a small amount of cured chorizo sausage in place of the meat and it added a nice flavor. Don't think I'll be making these greens again, but not because of the recipe. They just didn't bring me the "southern comfort" I was looking for.

Cola Chops
This recipe is very good. I doubled the sauce and substituted chicken breasts for the chops. I cooked stovetop like another reviewer suggested, and they turned out very tender! The only thing I will do differently next time is reduce the brown sugar by about half. I believe the cola provides enough sugar in this recipe, and with the added brown sugar I found the sauce to be a bit too sweet for my liking. Otherwise, the recipe's great!
