Super-Delicious Zuppa Toscana

It was awesome! I took the advice and used kale instead of spinach and was happy with it. I used crushed up chiltipin peppers from the garden for my red pepper flakes which are SUPER spicy. Yummy!

Fresh Tomato Sauce

It was good for a fresh summer spaghetti sauce. It's not very thick is why I say it's nice and light for the summer and used up some of our garden produce that was ready to go. Thanks.

Crab Ceviche

Reviewed: May 26, 2009
This was the base of a great creation at my house. My husband has a beautiful garden which sometimes determines our ingredients. I used 8-10 oz imitation crab legs, 4 small red tomatoes, 1 medium yellow tomato, 3/4 of a large cucumber, one small white onion, 4 small jalapenos, 1 green chili, squeezed 2 large limes, some fresh dill, a few tbsp. olive oil, a bunch of black pepper and a generous amount of salt and mediterranean sea salt. I diced all of thes ingredients and served it with some Hint of Lime Tostitos. AWESOME!!!!!!!!!!!!!!1

Herbed Potato Soup

Reviewed: Apr. 11, 2009
I boiled the potatoes in chicken broth, added 4-5 strips of bacon, used a lot of pepper, some thyme, oregano, and a little salt. I sprinkled with parmesan cheese and red pepper flakes. My husband likes everything hot, so we dashed some Tapatio hot sauce in our bowls. It was super yummy!

Dee's Roast Pork for Tacos

Reviewed: Mar. 21, 2009
This was great! I made a few changes and I only had a 2 lb roast. I didn't have taco seasoning, but I used about a tbsp of chili powder, and half a tbsp of cumin and cayenne pepper and garlic salt. I used fresh garlic, fresh Hatch green chilis, and topped the meat off with about 3 oz of Tapatio sauce. I made it in the crock pot, high for an hour and low for another 3 hours. "Dee's" (these) Tacos are yummy! :)

It was a very yummy, easy way to cook the tails being my first time. I used roasted garlic mediterranean sea salt from costco and a little lemon juice too.

Easy Slow Cooker French Dip

Reviewed: Jan. 25, 2009
I loved it! I am very picky about my french dips and this was great. I followed the advice to add a bit of worchestire and some fresh garlic and spices. I sliced it thin and then let it cook some more to soak up all the juice. I sauteed some mushrooms separately and added those with mozzarella in the french bread. Yum!

Chicken Chow Mein

Reviewed: Jan. 24, 2009
It was a hit! I am not a huge fan of Chinese foods and this was just enough for me. I used 1/4 cup soy and cauliflower instead of green beans. I only used one onion and next time I would use more mushrooms. I slightly fried the noodles in some olive oil after draining and rinsing because it was the only oil I had on hand. It is yummy, thank you!

Mom's Chicken Cacciatore

Reviewed: Jan. 24, 2009
The recipe was pretty good, but my husband decided he just doesn't like chicken with pasta very much. So that was too bad. I added some fresh broccoli from the garden. I used penne noodles. I really liked it the night I ate it, but I ended up tossing the leftovers which I hate doing, but everyday I wuold try to eat the leftovers-it just didn't look good anymore. Maybe I will make it again and use a different sauce.

Nany's Cheesy Cauliflower Casserole

Reviewed: Jan. 20, 2009
The perfect recipe to try out our first cauliflower from our winter garden. I mixed broccoli and cauliflower and steamed it. I did 1/2 mayo 1/2 ranch flavored sour cream (about 3 heaping tbsps. each), a few small chunks of velveeta cheese and sprinkled with saltines (no butter). It was awesome!
