Chicken Pot Pie IX
One of the best Chicken Pot Pies I have ever had! I took the advice of some other reviews and doubled the sauce and added potatoes. I also used homemade crust - can't be beat!

Baked Dijon Salmon
As always, choosing fresh, wild (NOT farmed) salmon is crucial to a good outcome. I tend to be a salmon purist and I like to keep flavorings light and simple so as not to take away from the salmon flavor (usually I grill on an alder plank). However, my grill is broken and I decided to try something different with a coho salmon that I had just caught. I was pleasantly surprised that the dijon flavor and nuts compimented the salmon so well. If I make it again I will use 1/2 the called-for dijon and try using a little rosemary and spread the sauce just a little thinner (it is still easy to drown out the delicate salmon flavor). My kids loved it.

Brown Sugar Meatloaf
I followed the recipe as written, but simply found it to be too bland and way too greasy and moist for my taste. I can see why some people who don't like meatloaf like this recipe because it does taste pretty good, simply not what I expect from meatloaf.
