Grilled Chipotle Marinated Chicken

Excellent marinade. I added more garlic and chipotles and bbq'd split chicken halves over lump charcoal with mesquite chunks. Very moist and flavorful... Oh, and that skin! A crispy delight! Thanks for the recipe.

Turkey-Stuffed Peppers

My family loved these. I doubled the recipe and used red and yellow bell peppers. I also used ground turkey breast and added some Herbes de Provence. Will definitely make again. Thanks for a great recipe!

Irresistible Irish Soda Bread

It's ok, but nothing special. I added 1 cup dark raisins to the batter as some of the reviews stated. It looks beautiful, but lacking flavor. It's kind of like a loaf of biscuit-raisin bread. Maybe adding some cinnamon would give it more flavor. Sorry, but I won't make it again.

Apple Cake III

I made this using cherry pie filling, 1/2 tsp. almond extract instead of the cinnamon and chopped blanched almonds instead of the walnuts. My son and husband begged me to make another one right after they polished it off! This was extremely easy and delicious. Perfect as a coffee cake for the morning!

Empanadas

My son and I made these for a class project and they were gone in seconds! I used peach preserves, but I'm sure any type of canned pie filling would work just as well. The kids and the teacher want to know when I'm going to make some more!

Best Lemonade Ever

Tart and sweet... Just how we like it! If you don't like it that way, let it mellow down with some ice cubes. Will definitely make many more times 'cause I have 2 lemon trees bursting with fruit.
