I love cajun food, anything creamy or southern. I have to watch it, because my husband has blood pressure and cholesterol problems.

Of course holidays, but bbq is my favorite because it gets us all outside and having a great time!

Shredded Beef Sandwiches
I made this recipe following the exact instructions, and it was good. Then I shortened it up to make it even easier, and it was actually better! I put the stew meat into my crock pot, dumped in a cup and a half of store bought BBQ sauce, and cooked on high for 5 hours. I scooped the meat out, shredded it, and added a slurry to my bbq sauce to thicken it. then I added the BBQ to the meat, and it turned out PERFECT! Hope this helps.

Chicken Breasts with Balsamic Vinegar and Garlic
This was one of those dishes that became a 'regular' in my house. The sauce goes well on steamed carrots or brocolli. This was great!

Creamy Pesto Shrimp
this recipe is now a favorite! I also used half and half, made my own pesto, and used fresh large gulf brown shrimp. not great for the cholesterol, but still wonderful! Tried this with chicken to reduce the cholesterol, and wasn't very good.
