I'm a 26 year old Wisconsin female that lives with her boyfriend, American Eskimo Dog, and ferret. I love to cook and bake, and I'm always on the lookout for new recipes to try. I'm currently teaching my boyfriend to cook and bake, so we browse this site together.
My favorite things to cook
I love to bake, anything sweet is good in my book. I am told I'm quite good with both Mexican and Italian dishes, which makes sense since they're my favorites and I cook them quite often.

Cranberry Salad IV
I tweaked this a lot, but I adored what I came up with in the end. I used 2 cups of ground fresh cranberries, a large can of crushed pineapple, and a large strained jar of mini mandarin oranges. I let it soak in 1 1/2 cups sugar for several hours, straining the juice as necessary. I also used whole mini marshmallows, and flavored my whipping cream with a toss of powdered sugar and some vanilla extract. The result was the perfect combination of tart and sweet. I loved it, and it went over well at Christmas. Will definitely make this again, five stars!

Mini Sweet Potato Casserole
It was quite good. The coconut lends a unique, sweet flavor to the dish. I'm not usually huge into sweet potatoes, but I made it as one of the side dishes for Christmas dinner and everyone seemed to like it well enough. The raisins were a yummy touch. The only complaint was that it was too sweet for a few people. Overall, I'd give it four stars.

Sweet Potato Minestrone
This was very, very good! With a few small tweaks, I'd easily give it five stars. I added a can of strained corn to mine, as well as a can of white kidney beans. I also added more seasoning than the recipe called for, but that's just a personal preference. It was one of the side dishes at Christmas dinner, and was absolutely to die for with a bit of cut up ham tossed into the bowl. I will definitely make this again, everyone loved it.
