About this Cook
I'm a librarian, a singer, and a Mom who has raised two terrific kids! I was raised very much "meat-potatoes-and Green Giant peas and corn", but my husband and kids and I are much more adventurous in our tastes and cooking styles now. I adore fresh fruits and veggies, and any kind of spicy food.
My favorite things to cook
Baking, especially cookies; Simple, quick dishes using fresh ingredients; Ethnic foods: Asian, Mediterranean, Mexican, Indian (did I say I liked spicy food??)
My favorite family cooking traditions
Baking lots of different kinds of cookies for Christmas - my Mom has set that example! Also, my Mom's corn pudding for Thanksgiving, my Grandma's German potato salad, and our latest family tradition: The Christmas Lasagna!

Rosemary Lemon Grilled Chicken
This is a great recipe! I cut the butter down to a couple of tablespoons, to get the buttery flavor, and used a 1/4 cup of EVOO. I marinated in a large zip-bag, and instead of grilling, baked the chicken in the oven. Cooked it for my parents, and they raved about it! Can't wait to try it on the grill!

Apple and Onion Beef Pot Roast
This is one of the tastiest pot roast recipes I've tried. I used a shoulder roast & cooked in the CrockPot for 4 hours on high. I tweaked it a little: used a cup of leftover Guinness for part of the liquid and added allspice and ginger to accent the apple flavor. Next time I'll use 2 apples. Meat was moist and tender!
