I think this was excellent, my wife and I both enjoyed it. No lamb, so I used all beef and doubled the recipe. Used some extra of each seasoning. I added a couple of tablespoons of olive oil to the mix for a better consistency in the meat. Shaped them into about brick shape and grilled them. With homemade pitas and tzatziki sauce, garden tomatoes and onions, it was excellent. Will definitely do again.

Emily's Famous Hash Browns

These were excellent and will definitely be making again. I added about 2 tsp. of minced garlic and used much less oil, I think the original calls for too much, about 3-4 tbsp. worth. Great hash browns!

Chocolate Covered Caramel Surprise Cookies

These were great and gone in a flash at a church dinner. My wife made these and at least 4 or 5 people came and asked for the recipe with one saying they were the best cookie ever. They were chewy and excellent. Will definitely be doing again. She took the minature peanut butter cups and cut them in half and used those, and those were the best.

Chris' Bay Area Burger

Have made these twice now, very good. Did them once with regular black pepper, once with fresh ground black pepper, fresh made them much better. These are great with mayo, bacon, pepperjack cheese, and avocado.

Delicious Ham and Potato Soup

This was great and easy to fix. I always mess with ingredients. I cooked some thick bacon in the stock pot first, I also added minced garlic. Sauteed it all in the bacon grease. I just used deli sliced ham. I tossed a handful of fresh, chopped cilantro just before adding the milk mixture. I used skim milk, and the consistency was wonderful. Great potato soup, and I am picky about potato soup.

Chocolate Caramel Cheesecake

This is the best cheesecake I have had. I made the crust from chocolate filled Oreos, filling included in crust, about 3/4 of the bag. I sauted the pecans in butter with a couple sprinkles of salt. I really beat the filling to get a lot of air in. This is not as heavy as most cheesecakes, much creamier, more chocolaty. Next time I will double the caramel and use Ghiradelli double chocolate chips. I also mixed the rest of the chips straight into the filling for baking. YUM!

Coconut Ice Cream

This recipe was delicious. My only alteration was to use half and half instead of heavy whipping cream and just a small handful of the shredded coconut. I made it in one of the two quart counter ice cream makers where you just freeze the bucket. The consistency was perfect and not too rich. Next time I will try it with pineapple for a pina colada taste. Will definitely make this again.
