Veronica's Apple Pancakes

Not bad! The applesauce for butter substitute (mentioned by one reviewer) works well. I doubled the cinnamon and substituted a packet of vanilla sugar and some Splenda for the white sugar. Will make again! Edit: I made this a second time, using a 2 tablespoons sugar: the packet of vanilla sugar and the rest brown sugar. It was perfect. Also, I found it's worth the time to shred the apple(s) instead of just dicing them. The pancakes cook more evenly.

Very nice sauce, but the dish definitely needs at least double the amount the recipe calls for, especially if you're going to serve this with something like rice which could benefit from the sauce, too.

Hot Chocolate

I was skeptical about egg in hot chocolate, but tried it, and found that it really adds to the flavor. I was also skeptical that there wasn't any salt in the recipe, but the egg (a high-sodium food) seems to do the trick. I recommend keeping it! I used only white chocolate (all I had in the cupboard) and it was good, though with only a "delicate" chocolatey flavor. I'll try doubling the amount of chocolate next time. However, it's WORTH the time to use real, grated chocolate!

Slow-Cooker Chicken Tortilla Soup

This was excellent. I used one fresh green chili pepper and a jar of fajita sauce (all that was available). I took the advice of other reviewers and just threw in the uncooked chicken. Four hours later it was ready to eat and my guests were quite happy with it! The lime juice, sour cream and regular tortilla chip ideas were great ones, too. Yummy!

Egg Noodle Lasagna

This recipe was good and easy. I didn't butter the noodles so as to cut out some of the fat, but it didn't diminish the taste, imo. I used more sauce than was called for, and I think it could have used even more. But overall, a very good recipe.
