Tofu Parmigiana

With the first bite, my reaction was "Oh my God, this is amazing!" I had no idea tofu could be that good. I am NOT a tofu lover but I have been trying to find a way to incorporate it into my diet - it's healthy and there is tons of it where I live (Korea). Well I think I have found the one! This recipe is great! I didn't have tomato sauce so I blended canned diced tomatoes with the spices and garlic - it turned out delicious. You can also play around with the spices a little. I fried the tofu like the recipe instructed and I was perfectly happy with the result. I will try baking next time just to see the difference. I have to say though, I don't think the tofu needs to be crispy for this kind of meal. Soft but chewy (the texture I got after I forgot it in the freezer all night and then just thawed and cooked) was perfect. The flavors of the sauce totally killed the tofu-y flavor that usually turns me off. This is a keeper. I am making it for my boyfriend next time, and maybe even his parents (Korean).

Baked Sweet Potato Sticks

Very delicious! I added salt, pepper, and garlic powder as well. I do not particularly like sweet potatoes so I may need to increase the amount of spice and salt to 'mask' the sweetness a bit in the future. Also, I don't think the sweet potatoes I buy are organic so next time I will go safe and peel them before I cook them. The skins are delicious but I don't want to risk adding pesticides to my dish. Anyway, I'm having these as a snack and they are delicious!

Whipped Cream

I was too careful not to overbeat the cream so I think I underbeat it - it was a bit thin and runny, but just a bit! I made it because I was craving something sweet and I didn't really have anything worthy at home. But this was delicious! The flavor is so good I never want to buy ready-made again! And it's easy to make, and will go with everything! I will make this many more times :-)

Chinese Chicken and Potato Soup

Loved the taste! Clean and 'chickeny'. I thought this was too little chicken for too many veggies though, so I doubled the chicken and pretty much cut the veggies ratio in half. Tasted heavenly :-)

Cream Cheese Pound Cake

Good recipe I guess (not very experienced with baking and I haven't had many pound cakes before so not sure what it should taste like). I didn't have white sugar and I used brown so the cake turned a darker color but that's kind of nice. I expected the brown sugar would add a pleasant flavor so I didn't add vanilla as some of the other comments suggested but it turned out a little plain. Also, my eggs were right out of the fridge so the mixture curdled as I added them. I didn't know ALL ingredients were supposed to be room temperature. Maybe as a result of the curdling, the cake was less fluffy than I wished. The crust was nice and crispy, though, and overall it was quite good. AND, my boyfriend loved it! I'm adding this some time after the preivous part. After the cake sat for a day or two, it tasted a lot better! I gave it four stars before but I changed my mind and fixed the rating to five stars! This cake deserves the highest rating!

Southern Mushroom Soup

Increadibly tasty soup! I am a terrible cook and I realy on this site for inspiration and good advice, and this time the result was so good I couldn't believe I had cooked the soup myself! Will deffinitely make again, especially since my boyfriend is begging me to (for the first time, haha)
