Bow Tie Pasta with Sausage and Sweet Peppers
This dish was great. I used half Hot pork sausage and 2 brats of salsiccia sausage (that I pulled out of the brat skins) and I sauted it all and left it in big chunks. I probably added more than a 1/2 cup of water because I wanted more sauce and I put 2 beef bouillon cubes (to make it a beef broth). Then I stirred in about 4 ounces of cream cheese and let it melt and it was delicious. I also didn't drain the juice from the sausage. This is definitely a keeper!

Tortilla and Bean Soup
This was a very good, easy and healthy recipe. I was surprised it had so much flavor. I modified the recipe a bit though. I made a half portion so I used 3 cups of water and boiled 2 chicken breasts in there and then shredded the chicken. I used two cans of beans (pinto and great northern beans) and I pureed a few of the beans and a little of the diced tomatoes to try to give a little more thickness and flavor to the broth. Overall, it was really great.

Chicken Pot Pie I
I've never made a chicken pot pie before and this turned out very good and was easy. I shredded my chicken and followed other suggestions and used 2 cans of cream of chicken and used one package of frozen mixed veggies (peas, carrots, and green beans) and added a little bit of milk. I also threw in some seasonings. I had to cook it longer than the 45 minutes but that's probably because I used frozen veggies instead of canned. I waited until the gravy was bubbling up out of the crust. My husband loved it!
