Reviewed: Oct. 30, 2008
I thought I had rated this! I cant belive I hadnt rated this yet. I made this a long while back ago and I have to say this is the closet and easiest thing to homemade Chicken & Dumplings that I have tried. I was quite shocked at how well they came out honestly. Thanks for sharing. I will be making these again soon!

SUGAR 1/2 CUP WATER 1-2 TBSP CORNSTARCH For the cream cheese mixture: BEAT cream cheese, powdered sugar, butter, vanilla, and sugar in small mixer bowl until smooth. Pumpkin Spiced and Iced Cookies

Reviewed: Oct. 23, 2008
Really different and very good. I dont like pumpkin pie but like pumpkin bread so I was hoping these would be something I could enjoy :) I was right. These are a nice change to cookies. I think the icing makes the cookie have just enough of what it needs to make it perfect for me. Thank you for sharing. I am a major cookie lover so this is going into my cookie recipe folder :)

Spanish Rice II

Reviewed: Oct. 17, 2008
I really loved this recipe :) I couldnt stop digging into the rice as if it were the main dish. I am not a huge rice fan but love spanish rice and this was excellent in taste. The only substitute that I made was I used a can of plain petite diced tomatoes and added about 1 TSP of diced jalepenos (the ones from a jar)' instead of the tomatoes with chiles. Thank you for sharing this recipe. This is going into my favorites folder.

Shrimp Linguine

Reviewed: Sep. 25, 2008
Great recipe! I had to alter a few ingredients and I added some but loved this recipe base. I didnt have whipping cream so I used 1% milk thickened with a few tablespoons of cornstarch. I also added 1/3 cup of white wine (flavored with mango and pineapple flavors) and diced up an onion to throw in with a whole stick of butter instead of 6 tbsp. I included basil in my seasoning choices as well.

Creamy Hot Cocoa

Reviewed: Sep. 17, 2008
Perfect taste of chocolate and I always love the addition of the salt. It gives this hot cocoa the extra touch I enjoy. I was out of half & half so I just left it out and this was still excellent. Thank you for a great chocolaty drink recipe...too bad these restaurants and vending machines cant duplicate this. I always find those places to have watered down hot choc. and I just hate it. This is the real deal :)

Vietnamese Iced Coffee

Reviewed: Sep. 12, 2008
I didnt make this exactly as written but it gave me the general idea of what to do finally! I have long tried to find the right sweetness to get a good frap. I finally have that thanks to you :) I can deter my hubby's daily Starbucks habit now :D lol. I made a frap using the following: 2 cups Strong Cold Coffee,Ice to desired thickness maybe 1 handful or two I used??? and 1/2 cup of Sweetened Condensed Milk. Blend until combined well. Making sure to get all those pieces of ice chopped up into fine bits of nothing :) I even melt about 1/3 Cup Andes Mint Baking Pieces along with 1 TBSP milk in the microwave and pour into the blender (you can also add choc syrup)and yummy a mocha mint coffee frap :) This was just absolutely wonderful. I never drink hot coffee but I love this stuff! Thank you for the inpsiration and I am sure your recipe is excellent as written but I didnt have the coffee beans on hand :)

Peppermint Patty Brownies

Reviewed: Sep. 8, 2008
Very good brownie. I did leave mine in too long I think. It was still very moist and although fudgy I would say that it is more on the cakey side (or at least mine was). My mints melted and sank to the bottom :( I think due to the overbaking. I will try these again and try not to leave them in too long this time. It just seemed like they were not done when I kept checking them. TY for the yummy recipe.

Cream Corn Like No Other

Reviewed: Sep. 3, 2008
This was very good. I did have to alter things only because I didnt have all of the ingredients on hand. I did have canned corn (not creamed) but no frozen so I used 2 Cans (drained) and I used 1% milk since that is all that I had on hand. I also added some garlic & onion powder for taste. It was still good but I cannot wait to to try it according to recipe. Thank you for sharing this recipe. I will update my review once I have tried the original recipe.

The topping taste wonderful but blah I am so not a fish eater and was hoping this would make me like fish more. It didn't. I think I will use this on chicken next time and see how it tastes :) Thank you for the recipe as it is perfect. My husband liked it as well as the kids. I just am not a lover of any fish I guess.

Lemon Poppy Seed Bundt Cake

Reviewed: Sep. 1, 2008
9/1/08: My husband and kids have raved over this cake since I first made it. I have also made it for friends and family and they all love it as well. The only changes that I made were to omit the poppy seeds (could not find any) and I added 1/4 cup lemon juice to the batter. I used the glaze recommended on the reviews and its soooo good. This is a keeper in our family. To make the glaze I used 1 1/2 cups powdered sugar and 1/4 cup-1/2 cup lemon juice. UPDATE: 12/15/08: I have made this recipe so many times. It is a definite favorite in our house and I have been asked for the recipe as well. I have since changed how I make this to make it a little less moist. I think after making this several times 2 TBS of Lemon Juice to the batter is plenty and I use 1/4 cup Oil with no problems. I also use Lemon Pudding Mix instead of Vanilla. I have made the glaze using less and its still really good. 1/2 cup Powdered sugar 1/4 cup lemon juice works well together poured over the cake. I did also incorporate the Poppy Seeds this time & love that in there. Thank you so very much again!

Cream Cheese Jalapeno Hamburgers

Reviewed: Aug. 5, 2008
Excellent burgers! I will continue to make them this way now :) Thank you so very much for the recipe. I did only use 1 block of cream cheese w/2 lbs of Hamburger and it was plenty also I did add 2 TBSP Garlic Powder to mine and 1/4 c diced jar jalepenos (what I had on hand). I also made the kids some without the jalepenos and added garlic herb seasoning from Mrs.Dash to theirs :) Very moist and juicy burgers with loads of flavor. I can not wait to have these again.

Roast Sticky Chicken-Rotisserie Style

Reviewed: Aug. 5, 2008
I thought this had alot of flavor and was good. My husband didnt like it really. He said it tasted like vinegar yet there are no vinegar in it so I dont know why that was. He hates vinegar if he can taste it :) I am thinking the combination of spices and juices caused him to think that? I probably wont make it again since he didnt care for it but I honestly thought it was ok :)

Soft Chocolate Mint Cookies

Reviewed: Aug. 4, 2008
I am rating this a 5 even though I altered the recipe some (to accomodate for what I had on hand). It was a wonderfully soft and delicious cookie even the next day :) Thank you so very much for sharing this recipe. Now a new favorite of mine. It inspired a different variation from myself. I didn't have unsweetened chocolate so I used about 1/3 but probably should have went to a 1/2 cup unsweetened cocoa powder (just to give it more color: it was more the color of a choc chip cookie base) and I omitted the mint extract and used Andes Baking Mints instead. This cookie still was excellent and perfect with Andes. I can hardly wait to try it with the chocolate in it :) TYSVM I think this would be great without the chocolate and mint and instead use with receses pieces baking pieces or something similar also.

Eggplant -- Easy, Good and Tasty

Reviewed: Jul. 21, 2008
Very good. Our family loved this. The only thing we preferred was not having the italian dressing on them (all of us) and not having the tomatoes on them (hubby) and we are all tomato lovers. I personally will make these again but next time we'll just leave off the tomatoes and dressing. I did use italian breadcrumbs and also topped with a little mozzerella cheese and parmesean. Thank you for sharing this recipe. It was my first time making eggplant :)
