Tex-Mex Burger with Cajun Mayo

I will update when I have cooked these burgers but I did want to say that the smell is AMAZING :) I can hardly wait to cook them. I am freezing these 3 days prior to cooking them on the grill to save time down the road. I did not change the original recipe much but had to for some things as this is what I had on hand. I doubled this recipe more or less. I had about 3 1/2 lbs of ground beef. I only had jar sliced jalepenos and used about 12 of those. I used 1 Cup diced onions,2 cloves garlic,and had no worch.sauce so I substitued 2 TBSP of A-1 Sauce. I also doubled the Cajun Seasoning for the meat mixture. I made 10 good sized hamburger patties out of this meat and had enough leftover meat to do something additional. I decided to do the following: I will be using leftover meat for tacos or a casserole. I added about 2 Tsp of Chili Pwdr to those and precooked the meat and allowed it to cool before adding to a freezer bag and we will either have it for lunch or I will put it in the freezer for another meal another day. Thank you for a great recipe! I just sampled the cooked meat mixture and I love it. It has a kick to it but we love spicy food! Just cut back on the Jalepeno if you do not like yours as spicy. MMM wish it was sunny and warm today this would be on the grill for sure! Thanks again. I will reveiw the burgers after we try those as well but so far I can't see why they wouldnt be just as great seeing as they will be topped with the pepper jack cheese

Chicken and Biscuit Casserole

Yum! Hit the spot! I wanted something different and I saw a recipe for something similar to this but used canned soup,etc and I wanted something not using soups. This was it! Thank you! I enjoyed my dinner tonight and the only thing that I changed was the veggies. I used onion,celery and broccoli pieces instead of carrots and peas. I am positive that carrots and peas would be great as well. I was just craving a broccoli dish. I used bisquick and buttermilk for my biscuits and I replaced basil in this recipe with Mrs.Dash Tomato,Basil,Garlic Seasoning. I also cooked the biscuits separately from the mixture and enjoyed it this way.

Sweet, Sticky and Spicy Chicken

Good recipe with good flavor. I did add garlic powder to my chicken as well. I would make it again. I agree that the chicken does need to be coated in flour. My chicken was not crispy but was still delicious. My husband really enjoyed it however the 4 kids mostly picked at it and left the majority on their plate. I doubled the recipe for my family of 6.

Vietnamese Iced Coffee

I didnt make this exactly as written but it gave me the general idea of what to do finally! I have long tried to find the right sweetness to get a good frap. I finally have that thanks to you :) I can deter my hubby's daily Starbucks habit now :D lol. I made a frap using the following: 2 cups Strong Cold Coffee,Ice to desired thickness maybe 1 handful or two I used??? and 1/2 cup of Sweetened Condensed Milk. Blend until combined well. Making sure to get all those pieces of ice chopped up into fine bits of nothing :) I even melt about 1/3 Cup Andes Mint Baking Pieces along with 1 TBSP milk in the microwave and pour into the blender (you can also add choc syrup)and yummy a mocha mint coffee frap :) This was just absolutely wonderful. I never drink hot coffee but I love this stuff! Thank you for the inpsiration and I am sure your recipe is excellent as written but I didnt have the coffee beans on hand :)

Rick's Special Buttercream Frosting

WARNING: It is hard to stop eating this icing once you sample it :D thanks for an awesome recipe. I love it! My Substitute for Heavy Whipping Cream: 2 TBSP Melted butter (then cooled to at least room temp) and 1% Milk (appx 4 ounces to make a total of 6 ounces). Used All Shortening as recipe called for & Added 2 tsp vanilla extract along with 1/2 tsp Wilton Butter Flavor. I did beat the Shortening for 10 minutes before adding powdered sugar and once the sugar was added I allowed it to get to a fine meal texture before adding the vanilla,salt,butter flavoring and Whipping Cream Substitute. I will update more once I use it on the cake and give a full review.

Chicken Fettuccini Alfredo

Delicious. Our family of 6 enjoyed this meal. *Some things that I did to help speed things up for dinner time: Used one large pan and threw all of the butter,onions,garlic,seasonings,chicken (used boiled chicken from the day before that was refrigerated) into the pan all at once...Once everything was sauted I removed it from the pan and added my flour mixture to make the roux, then added the milk mixture and once the sauce had thickened I added the cheese mixture (I used mozzerella & Parm *what I had on hand*)once that melted and incorporated I added the chicken mixture back in and stirred until incorporated and then added the sour cream. I topped this with crushed Butter Crackers (ie: townhouse,ritz,etc) and if you're in a real hurry you can make this in the afternoon for sure (that's what I did) I just left it in the pan and reheat at dinner time by adding a touch of milk to loosen the mixture & thats when you boil the noodles and combine the mixture if desired or top the noodles with the mixture. I used macaroni noodles to make it easier for the kids. Definitely will make again. I served this with the Cheese Herb Bread on this site which complimented it very well. I did leave out the mushrooms (didn't have any) and replaced the italian seasoning (didn't have any) with Mrs.Dash onion & herb seasoning & 1 TBSP garlic powder, only used 3 boneless skinless breasts,no tomatoes (was out of them) and I replaced the Colby-Jack Cheese with Mozzerella (all I had on hand).

Creamy Au Gratin Potatoes

We loved this recipe and the only small changes made are the way in which onions were cut. I processed mine in food processor until finely minced and I added 1 TBS Garlic Powder to the recipe.I did double this recipe as noted::::::: 8 russet potatoes, sliced into 1/4 inch slices:::: 1 onion, finely minced:::: salt and pepper to taste:::: 5 tablespoons butter::::: 1/3 cup all-purpose flour::: 1 teaspoon salt 3 cups milk 2 1/2 cups shredded Cheddar cheese added: 1 TBS garlic powder :::::Thanks for the recipe. It was delcious!

The Best Rolled Sugar Cookies

Excellent! Thanks SMDAILEY and KELLY for the tips on using the parchment paper & the additions. I ended up using an extra 1 cup of sugar and extra 1 tsp of vanilla extract thanks for the suggestions. We loved them. I also added 1 tsp lemon extract to the dough. I may try orange next time as well on some. It is just enough to give a subtle taste to this cookie. I used the Sugar Cookie Icing recipe on this site. It is a perfect compliment to this cookie. Thank you so very much for a fun day of baking.

Sugar Cookie Icing

Great Tasting and Very Easy to Use recipe. I used lemon extract in place of the almond and just eyeballed the milk and syrup (I actually used less syrup I would say). It worked great and my cookies look so adorable. Thanks for the fun recipe.

To Die For Blueberry Muffins

Great muffins! Thank You! I doubled the muffin Recipe which made about 12 average size muffins. I kept the topping the same as written except used brown sugar in place of white. The topping is enough to cover a double batch. I also used frozen berries and dusted with flour. My family ate these up in one sitting. I am happy to reuse this recipe.

Southern Potato Salad

This recipe was very good. I am sure that I will continue to use it. Thank you for posting it. I am not a relish lover but still used some and am glad that I did. I did add 1 TBS Apple Cider Vinegar to potatoes after draining the water off of them. and added 1 TBSP White Sugar to mixture. Garnished with boiled eggs and paprika. Used 1/2 mayo 1/2 miracle whip and my family loved it. Thanks again!

Slow Cooker Beef Stroganoff I

I took suggestions of others and improvised in my own ways as well. Wow! What a flavorful dish. I thought that this was packed full of flavor and was delicious. MY ALTERATIONS: #1 I doubled the recipe keeping cream cheese and worch.sauce measurments the same. #2 I also added Salt,Pepper,Garlic and since I only had one can of golden mushroom soup (and I was doubling) I used Cream of Chicken for my second can. You would never know. #3 Added 2 Heaping Tbsp Sour Cream Add A Bullion Cube Add 1/2 Packet of Onion Soup Mix #4 I also used chicken instead of Beef. I cooked my cubed chicken in a pan with 2 Tbsp Oil and seasoned it with garlic pwdr, onion pwdr, salt,pepper,cayenne and steak seasoning. The meat was a wonderful compliment to the sauce and egg noodles. I definitely will be remaking this dish. Thanks so much for the recipe and thanks to those that gave other flavor suggestions.

Hard Rock Candy

Worked perfectly! Thanks for the great recipe. The last recipe I had tried used 4 cups of sugar and it was too sweet! I made cinnamon since I wasted my orange on the last failed recipe. I cant wait to try other flavors now. This was my second time making this type of candy but this was my first success. I bought a candy thermometer and it helped keep the guessing work and mistakes away :) My kids love it as well but asked if I could not make it spicy next time LOL so for those that want a lil spice but not hot maybe go to 1 1/2 tsp cinnamon. My husband and I think this is just right though. I will try the 1 1/2 tsp for the kids next time. I did not use confectioners sugar to dust with. I also would definitely follow the recipe exactly and take the advice of others who said DO NOT STIR DURING BOILING. Thanks to those that mentioned it.

Grandpa Hubbard's Oatmeal

Very good. My kids ate seconds even. I used about 1/2 cup of powdered dairy creamer and 3/4 cup milk and added cinnamon and raisins and a touch more brown sugar and butter to the whole pot instead of doing it to portions and it tasted great. Creamy & flavorful. Thanks so much for this easily adaptable recipe. This would be great with any fruit. Updates: I used strawberries for a a strawberries and cream taste and it was delicious as well. I have used frozen mixed berries with great success as well. When I do not have the dairy creamer I have substituted using Milk or even powdered milk. This is the creamiest tasting oatmeal. I really enjoy it.

Lemon Poppy Seed Bundt Cake

9/1/08: My husband and kids have raved over this cake since I first made it. I have also made it for friends and family and they all love it as well. The only changes that I made were to omit the poppy seeds (could not find any) and I added 1/4 cup lemon juice to the batter. I used the glaze recommended on the reviews and its soooo good. This is a keeper in our family. To make the glaze I used 1 1/2 cups powdered sugar and 1/4 cup-1/2 cup lemon juice. UPDATE: 12/15/08: I have made this recipe so many times. It is a definite favorite in our house and I have been asked for the recipe as well. I have since changed how I make this to make it a little less moist. I think after making this several times 2 TBS of Lemon Juice to the batter is plenty and I use 1/4 cup Oil with no problems. I also use Lemon Pudding Mix instead of Vanilla. I have made the glaze using less and its still really good. 1/2 cup Powdered sugar 1/4 cup lemon juice works well together poured over the cake. I did also incorporate the Poppy Seeds this time & love that in there. Thank you so very much again!

Manicotti Italian Casserole

Very Good and Simple Recipe! Thank you so much. My family all raved over this on Day 1 and Day 2 they wanted more (the leftovers). It was just as wonderful on the 2nd day along with some homemade rolls from a wonderful recipe on this site: Portuguese Sweet Bread I. I will be making this regularly. I changed a few things to our liking and to what we had on hand. I took the pepperoni and pulsed it in the food processor until I had little bits and I used breakfast sausage (what I had on hand) I also added onions (sauted with the meat), italian seasoning,garlic powder,salt & pepper. I also threw in some hot banana peppers that I pulsed in the food processor. Yummy! This was delicious :) Thanks again!

Portuguese Sweet Bread I

Wonderful recipe! Perfect amount of sweetness as stated before. I am so happy to have this recipe thank you for sharing. It's simple and easy to follow even without a breadmaker. I used my kitchen aid dough hook and mixed all ingredients and allowed to rise for 1 hr and then punched down and shaped into rolls and let rise for another 15 minutes. They were wonderful. My family all enjoyed them and they were gone quick. Thanks to previous reviewers as well for tips on using the kitchen aid,making rolls and using all purpose flour(as a substitute). I can't wait to do more with the recipe. Thanks so much for sharing. Update: 12/15/08 I made these again last night and have made them numerous times. We love these rolls. I have made the dough in the bread machine and in the mixer with dough hook and both work great. The mixer is quick and easy. Just Warm the Milk add the yeast and sugar and allow to proof until foamy (10 mins or so) and then throw in the rest of the ingredients and mix and form into rolls or bread loaf. Allow to rise for about 30 mins-1hr and then Bake at 350 F for about 20 minutes or until lightly browned. I usually butter the tops also. My husband says these would be great with Jelly the next morning. This recipe makes 12 rolls.

Meatballs in Apple Butter

These were good. Tasted just fine but they did not go over well at my gathering. People tasted them once and never went back. Some never tried at all. The color could have been the problem lol. Not exactly a wowing color (apple butter color). I thought they were ok. I probably wont make again though as I ended up having to pitch some :(

Blueberry Buckle

Very Good. My family loved it. I changed nothing other than tossed the blueberries in flour (I used frozen). I did have to bake it longer than suggested however (possibly due to the frozen berries). Thank You for the great recipe.

Venison-Bacon White Chili

This recipe as is is good. I think it can get a little better. I ended up tweaking slightly to what we had on hand and what we preferred in the Chili. This is a great base recipe. I used this recipe in a crockpot by adding all ingredients except the venison and some butter to cook it in and once cooked through I added salt and pepper to it and 1/3 cup flour to coat the meat and then threw that in the crockpot. I HATE the cinnamon and nutmeg in it though. I can still eat it but find myself not wanting much due to these ingredients. I even got nauseated when reheating it for the husbands lunch thermos this morning (due to the smell of that cinnamon and nutmeg in there) LOL apparently I am not a fan of these ingredients in this dish. I love the overall flavor beyond those ingredients and next time will simply Omit those. I did add a 28 oz can of petite diced tomatoes and 1/2 taco seasoning packet as well as about 2 TBSP Taco Sauce and about 8 diced pickled Jalepenos to the mix. I substituted dry northern beans (1 Cup) for the crockpot method instead of using canned. My family enjoyed this dish. I am new to eating venison so I have to say this recipe is great in that I didnt feel like I tasted a gamey flavor in our meat.
