About this Cook
I am a 27 year old married mom with a very active 6 month old who keeps me very busy so easy cooking recipes have become my specialty. My husband of 1 1/2 years loves great food and his family favorites (thanks to his mother's home cooking)this makes it very interesting to try and get him to eat some of my dishes, but I am working on it.

Easy Apple Strudel
Very simple and easy recipe. I did change up the recipe a little. Like most reviewers I added a tsp of cinnamom, and used 5 small apples. I reduced sugar to 6 tbsp, and 1 tsp of lemon juice to keep the apples from browning and added a small handful of walnut pieces just before adding to the puff pastery. I let the apples, sugar and lemon juice sit for about 2 hours and then added 1 1/2 tbsp of flour to soak up the juices from the bottom of the bowl. Very yummy my husband couldn't wait to get into it and once he did I had a hard time from keeping him from going for seconds.

Vanilla - Chocolate Powdered Sugar Frosting
I made this icing to frost cupcakes for my 2 yr. old nephews birthday and everyone loved the icing. It is so hard to find a good vanilla icing recipe...especially one my husband will eat but this tasted amazing. I used light margarine instead of butter and the consistency was still pretty good. With the leftover icing I added some cocoa powder and diluted a bit of coffee granuals is some water to make the chocolate frosting which I refrigerated and used for a chocolate cake a few days later, delicious
