Butterscotch Bread Pudding

My sister and I have been trying to replicate a bread pudding recipe that we tried while down in Florida, and this is definitely as close as we've gotten! I made this for Thanksgiving dinner and it got absolutely fantastic reviews! We did add some raisins (not soaked in anything - I guess we drank it all. Ha.) and served it with the Whiskey Sauce from this site. I also threw in the entire bag of butterscotch chips because, well, why not? Completely out of this world and wouldn't change a thing. This also reheats really well. Thanks for ending our search for the perfect bread pudding!

Pad Thai

I have never, I mean EVER, made pad thai. While I've eaten quite a bit of it in my lifetime, I've never felt the need to tackle it in my own kitchen. I was really nervous working with ingredients that I had never worked with, but I followed the directions and it was absolutely fantastic! I used tofu instead of chicken, rice vinegar, and lime juice. Other than that, I added some carrots and mushrooms and followed the directions. Very good, and even better cold out of the refridgerator at 2:30 am (not that I would know about that or anything...) Great recipe - My pad thai thirst was quenched and I will definitely make this again!

No-Noodle Zucchini Lasagna

I can't believe how well this turned out. I sliced my zucchini with the "slicing" side of my cheese grater and they turned out great. I used ground italian sausage instead of ground beef, and dried herbs instead of fresh. I didn't drain the zucchini, but I didn't add any hot water either. I completely forgot the red wine (must have had too much in my glass!) but the dish was really delicious and now I have leftovers for a couple of days. Thanks for a GREAT recipe!

Rolled Flank Steak

I did what another user did and used steak that was already cut into individual servings (which turned out cheaper.) Next time I will buy more cheese (I didn't have quite as much as the recipe called for - my mistake) and I will let it marinate longer than the 30 minutes I had. This recipe is definitely a keeper. It turns out so beautifully that it looks like it took a lot more time that it actually did. Any dish that makes me look that good with minimal effort will certainly get made again in my kitchen!! Also, my husband tried a couple of his with banana peppers instead of the red bells, and he really liked it (although he LOVES banana peppers.) Great recipe - thanks so much!

Peachy Bread Pudding with Caramel Sauce

This was very good, however, a little note on the caramel sauce: being in Tennessee and unable to purchase rum on a Sunday, I decided to simply leave it out. Bad idea. The caramel sauce hardened quickly and wouldn't come out of my sauce pan without me heating it up. I put it on the bread pudding, and I thought my teeth were going to come out of my head trying to chew it. It tasted great, and I'm sure it would have been fantastic with the rum that certainly needs to go in there! I will try this again on a day when the liquor stores are open and hope for smoother results :)

Philly Cheesesteak Sandwich with Garlic Mayo

Incredibly tasty sandwich! I used one green and one red bell pepper and added some fresh mushrooms. Instead of using oil to cook the meat, I threw it in a pan with some soy and Worschestire to give it some more flavor. Used provolone instead of mozzarella, since it was on sale. This was my first time making these sandwiches and it certainly won't be my last! Thanks!

Sarge's EZ Pulled Pork BBQ

WOW! I made this for a 4th of July get-together and even the people who don't like BBQ gobbled this up. I used spare-ribs (they were on sale) and I've never in my life had my BBQ come out this nicely. The coffee really gave it a richness and a nice flavor. The night before I put it in the slow-cooker, I rubbed it with plain mustard and some spices (salt, pepper, garlic powder, onion powder, and paprika) and let it sit overnight before cooking it. I don't know if this helped or not, but it all turned out very well. Thanks, Sarge!!

Broccoli Chicken Casserole III

I left out the olives on accident and it was still a great dish. I threw the broccoli in with my pasta for about five minutes to soften it up and the texture came out nicely in the casserole. Very versatile recipe, which is always nice. Thanks for sharing!

Pineapple Angel Food Cake I

Dear Pineapple Angel Food Cake: Where have you been all my life? You're so easy, yet so tasty I can even serve you to company and listen to them ooh and ahh about my superior baking skills. I feel that this is the beginning of a beatutiful relationship. Seriously, though - great recipe. Thanks for sharing! Another note: I made this again just the other day and mixed the ingredients together with a hand-held mixer for around 1 - 1 1/2 minutes. The cake was fluffier and didn't fall like it did the first time when I simply mixed it by hand. Some more serious bakers may already know this, but I thought I would share! And another note: I used this recipe with fresh peaches and added a cup of water to make up for the lack of moisture. Another hit! I simply can't get enough of this recipe. Thank you!!

Beef and Bean Chimichangas

I will admit right off the bat that I thought the tortillas in my pantry weren't as old as they apprently were...and thus very crumbly. Since I couldn't get my tortillas to roll very well, I just layered everything lasagna style. The dish certainly didn't qualify for a chimichanga, but it tasted just as good and was even easier to put together. So, my laziness and forgetfulness has now lead to a new recipe in my household. I mixed in my refried beans with the beef mixture and used cheddar cheese instead of mont. jack. I used a combination of taco sauce and pizza sauce since again, I thought I had more of it in the pantry. I added half a packet of taco seasoning to make up for it, and it was fantastic. Great recipe, even with all my screw-ups. That totally deserves all 5 stars!

Bodacious Broccoli Salad

Love, love, love this salad! I also used the broccoli/cauliflower combination and also threw in some frozen peas that I defrosted. I used green onions instead of red, because that's what I had on-hand. Next time I will definitely try the red onion. I really liked the lemon juice. It gave it a nice kick in my opinion. This salad is really good, but it's even better the next day after it's marinated a little bit. YUM!

Chicken Casserole

This recipe rocked my socks! This could literally be made a hundred different ways using what you already have on-hand! I used a little green pepper and a little red pepper to use it up, left out the olives (I only like olives surrounded by vodka) and used fresh mushrooms instead of canned. I also substituted whole-wheat rotini for the egg noodles, spread the topping over the whole thing, and added some sour cream. My "cream-of" soup was 98% fat free and cream of mushroom and it turned out really well. Of course I added more cheese (with a little mozzerella mixed in) and YUM! I will definitely, definitely make this again!

Barbeque Chicken

I'm giving this four stars because I did have to modify the recipe a bit. I didn't add the water, on the advice of others, and it was still a little runny. I used some corn starch in my casserole dish about halfway through the cooking time (when I realized it was still runny) and it came out very well! Raves from my fiance and his two friends, so this will definitely make an appearance again. I also added some white pepper and paprika to the sauce, as well as doubling the recipe. I also put 1/2 chopped onion on the chicken (uncooked.) And one last thing I did was coat the chicken in mustard before I put the bbq sauce on. I really liked this recipe and I will use the sauce on different meats in the future. Thanks!

Slow Cooked Corned Beef for Sandwiches

I've never made corned beef before and this rocked my socks off! It literally took me five minutes to throw everything in the crock-pot and by the time I got home, my house smelled fantastic. I used a can of domestic beer, but I want to try other beers to see how they affect the flavor. Thanks for my staple corned beef recipe - now March 17 won't be the only day I eat corned beef!

Applesauce Pork Loin

This was super easy! I threw mine in my slow cooker and let it simmer all day. This took out any chance of it being dry (and it made my house smell fantastic!) I took another reviewer's advice and used the apple butter while omitting the honey. I also used dried rosemary instead of fresh. I will certainly make this again. Thanks for a great recipe that tastes like it took a lot more work than it actually does!

Easy Cajun Jambalaya

This was super easy and super good! I took another reviewer's advice and cooked my rice seperately. I had brown rice so I wasn't sure about the cooking time. I used shrimp instead of chicken and I added some canned jalapenos. Since I added the jalapenos, I didn't add any more heat with the cayenne or hot sauce. It was awesome the night I made it and the leftovers I'm munching on now are even better today. Great recipe!

Ham and Cheese Biscuits

This is a fantastic recipe! It made for a great, easy, and tasty appetizer. I followed other reviewers' advice and used King's Hawaiian rolls. I also sliced the whole package as a whole, instead of breaking apart the individual rolls. Fantastic and they're even good at room temperature. Thanks for a great recipe - I plan on making it over and over using turkey, different cheeses, and any other combination I can think of!

Baked Spaghetti II

I love this recipe! I tried my best to "healthy" it up and it still tasted great. I used whole-wheat spaghetti, reduced fat cream of mushroom soup, and reduced fat cheddar cheese (in addition to some full-fat mozzarella.) I also used ground pork instead of ground beef. While it sounds like a lot of changes, it really was a great recipe. I just love a dish that I can customize like this to fit what I have in the house. I'm looking forward to trying it with ground turkey and maybe some cottage cheese. Definitely a keeper - thanks for the recipe!

Mexican Pizza I

I really, really enjoyed this recipe! I used flour tortillas instead of corn (had 'em in the pantry) and I baked them in the oven at 350. Half of them I baked plain, and the other half I used a bit of olive oil on them. I honestly couldn't really tell a difference in the two. I baked them for around 12 - 14 minutes and they got pretty crispy without the fat of skillet-frying them. I love this dish because I can put all the stuff you can't get at the restaurant on mine AND make it as big as I want it! Now if I can only get my fiance to make them for me at 1am, we'll be set :) Thanks for a great recipe!
