I cut the recipe in half and added a bit more garlic, but other than that I made this recipe as directed. only marinated one day and think that longer might have been better. Also, I think I will give them a shot with fresh herbs next time. Eating them did remind me of being in upstate NY!

Swordfish a la Siciliana

Excellent! I am not a raisin lover, so I had planned on pushing mine to the side; the raisins were a perfect sweet counterpart to the saltiness of the olives and capers, however, and I thoroughly enjoyed them. This is a perfect dish for entertaining because the sauce could be made earlier in the day and spooned on the swordfish when ready to cook.

Tomato and Mozzarella Bites

I, too, used the oil and vinegar as a marinade and found these to be a very easy, tasty appetizer. Since I don't like salty food, I orginally didn't add much salt, but upped the amount after reading the review by IMVINTAGE. It made a huge difference in the flavor. Heavenly!

Southern Style Thanksgiving Green Beans

Stephen's Chocolate Chip Cookies

My husband's favorite chocolate chip cookie recipe is one that I have been making for years from King Arthur Flour (it is no longer on their website, or I would direct you there). Anyway, everytime I make a different chocolate chip cookie my husband will say "it's good, but it's not as good as my favorite". I made this recipe, using King Arthur organic whole wheat white flour, all three chips, and pecans only. "Oh, no, these are as good as my favorites and now I won't know which to ask for!" cried hubby. That makes these crispy cookies one darn good cookie!

Fresh Tomato Pasta

This is one of my favorite "end of the summer when tomatoes are abundant and delicious" recipes. I use more than one tomato per 8 ounces of pasta, lots of garlic, and fresh basil. Leftover sauce is superb on grilled chicken or fish.

Pork Tenderloin with Dijon Marsala Sauce

A+++ recipe! I made it exactly as written, except that the good angel over my shoulder must have nudged aside the bad angel at the grocery, because I ended up with light cream instead of heavy cream. I outsmarted the good angel by adding an extra pat of butter to the sauce!! I would make it the same way again, and I would definitely make this to impress guests. Served with whole wheat couscous and tender, fresh green beans cooked in chicken broth, this was an easy and delectable meal.

I enjoyed this side dish paired with a simple oven fried fish. I did not love the pimento flavor, although I did love the color. The next time I will use finely diced roasted red peppers.

I used all butter and King Arthur organic whole wheat white flour. I am a cinnamon lover, but I thought these were a bit heavy handed with the cinnamon, even though I cut back. I added King Arthur extreme bittersweet chocolate chips and dried cranberries and, although they were good, I think I might have liked them better plain or with just pecans.

White Chocolate Macadamia Nut Cookies IV

Very tasty cookie! I used King Arthur organic whole wheat white flour, which worked quite nicely. We thought that the cookies tasted much better after sitting overnight. The white chocolate got very dark on the cookie bottoms of the first batch I made, so I reduced the oven temp to 350 degrees and nested one cookie sheet on top of another. The remainder came out great!

Red Potato Salad

What a great find this recipe is! I'm not sure how or why, but it does not taste at all like a low fat version of potato salad; the dressing is creamy and delicious. I used fresh dill because I had some in the fridge, used a few more green onions because I love the onion flavor in potato salad, and liberally salt and peppered. Fabulous recipe, What A Dish, thanks!

Cream of Broccoli Soup I

I cooked extra broccoli in low sodium chicken broth and added just a touch of Penzey's chicken soup base. My immersion blender worked nicely, but I did leave some chunks of broccoli. 1% milk seemed to work fine here, and I finished the soup off with some dry sherry. I used a little less freshly grated nutmeg than called for since I was adding the sherry. This was a quick, healthy, and delicious soup!

Salmon with Tomatoes

Wonderful salmon dish! I grilled the salmon and put the sauce over it, but I am sure it would have better picked up the tomato flavor if it had been cooked in the sauce. I just wasn't in the mood for salmon chunks. I did up the amount of hot sauce a bit. Served with brown rice and asparagus, this was a simple and delicious meal.

Cedar Plank-Grilled Salmon with Garlic, Lemon and Dill

Delicious recipe! The cedar plank gives the fish just a touch of a smoke flavor and the fish was nice and moist. I used about 1/4 teaspoon of salt, and thought it was plenty. I wouldn't hesitate to serve this to guests!

Dinah's Baked Scallops

This is a nice, simple recipe that enhances the sweetness of the scallops. I mixed about 1/4 cup butter with fresh garlic and the crushed cracker crumbs. I then put the scallops in a greased casserole dish, topped it with the crumb mixture, and drizzled the wine/lemon juice mixture over it. I drizzled just a bit more butter over the top and baked. When they were done, I ran the casserole under a hot broiler to make sure the crumbs were brown and crisp. Very good!

Harvest Salad

I used jam without seeds (I'm not sure what the seeds would have added) and used feta cheese. I also skipped the walnuts because I like them best in salads when they have been toasted, and I had no time for that. I will add them next time. This was a great salad; both tasty and attractive!
