Jamie's Cranberry Spinach Salad

I have been making this salad for years and cannot believe I have not reviewed it before. It is one of my favorite salads. I use baby salad spinach, toast the almonds in the oven with no butter, and cut the sugar in the dressing down to 1/4 cup. This is always a hit, even with non-lovers of spinach!

Chicken in a Pot

I doubled the sauce ingredients, including the mushrooms (thank you, reviewers!). This was a nice, simple, delicious dish. I served with roasted garlic cauliflower from this site, and French cut green beans with almonds. Easy and very good!

Gingerbread Biscotti

I made these today for Thanksgiving, and it will be a miracle if they last until then. My husband and I both love them. My original intention had been to drizzle with white chocolate, but why mess with perfection? My dough was very sticky, so I added a bit more flour, and I lowered the temperature to 350 degrees. I didn't bother turning the cut biscotti. Magnificent!!!

French Bread Rolls to Die For

I tried to sub half of the white flour with King Arthur organic whole wheat white. They weren't awful, they just weren't as good as I know they would have been if I had followed the recipe.

Beef Stew V

My entire family loved this stew! I cooked the floured meat right in my soup pot and deglazed it with the liquid. Perhaps that is why mine came out nice and thick, not at all like a soup. I used half beef broth and half water with a touch of better than bouillon for the water. I used petite-diced tomatoes, less celery, and added some frozen peas at the end of cooking for both color and flavor. This was comfort food at it's best!

Chicken Delicious

This was pretty darn good for a slow cooker/canned soup recipe. I realized that I wasn't going to be able to make what I had planned for dinner, so had to look for a recipe I could cook in the slow cooker. I used low sodium soups and Spanish smoked paprika. My daughter thought it was bland, but I think she just likes more salt than I do. I served this with rotini whole grain pasta, baby carrots and broccoli, and I would make this again. The sauce is a bit thin, so I might thicken it next time.

Blender Hollandaise Sauce

This is the easiest hollandaise recipe ever, and very tasty. I have been using this method for hollandaise for years and it always works, as long as your butter is hot enough and you use at least three yolks. I have had no luck making a smaller amount. This made our lobster benedict a real treat!!

Southern Pulled Pork

I made this as directed and felt that it really lacked flavor. As others recommended I added barbeque sauce, but felt that the flavor of the sauce didn't go well with the flavor of the pork. I also thought that cutting the pork into chunks and browning it, as well as cooking on high, made the meat drier than pulled pork recipes that I have used.

Split Pea Soup

This is a very nice, basic split pea soup. I usually use smoked ham hocks if I don't have a ham bone, but I went to two stores and couldn't find any. I used smoked ham neck bones instead, and I thought they made the soup very flavorful.

Chewy Peanut Butter Chocolate Chip Cookies

As I always do when making cookies, I subbed King Arthur organic Whole wheat white flour for the all-purpose flour, and this is the first time that I think it made a difference in the cookie. My cookies came out cakey and dry. They also did not have much of a peanut butter flavor. I should have read more reviews and added additional peanut butter.

Zesty Tuna Salad

The mustard did give a little zip to a very basic tuna salad. I was drawn to this recipe because it only called for one teaspoon of mayo, but I did have to add a bit more so that it wasn't dry.

Summer Corn Salad

My local produce market had corn that they had marked as "the best of the year", so I decided to make this salad. The corn was fabulous and sweet, but made as directed, this salad did not wow me. I did let it marinate for several hours, but the flavor just wasn't there. I added some homemade italian dressing for a little more flavor before serving.

Virgina's Tuna Salad

I used one egg for only one can of tuna, and thought it was perfect. I cut all the other ingredients by a third, except for the mayo, which I cut even a bit more. Dill relish was my choice. I really enjoyed this simple salad for lunch!

Slammin' Salmon

Very nice! After reading other reviews, I didn't bother with the peanut oil, but did use the sesame oil for the flavor. As always, I used low sodium tamari soy sauce. Marinated only two hours, my wild Alaskan salmon was very flavorful and moist. I served this with garlic red potatoes from this site and it was a wonderful combo.

Garlic Red Potatoes

LOVED, LOVED, LOVED this recipe. I could have eaten the entire bowl myself! I used small red creamers and less butter. I sprinkled them with Spanish smoked paprika from Penzeys for the final ten minutes, which put them over the top, flavorwise. Thanks, Laura, I will make these often.

Warm Mushroom Spread

I have to give this five stars because of the way my friends raved and scarfed it down, but I thought it was missing a little something. I would probably add a chipotle pepper next time or something with a little heat. I bet it would be delicious on a steak, as other reviewers noted.

Warm Blue Cheese Dip with Garlic and Bacon

I do not care for blue cheese, but after reading the reviews I decided to give this a try. I did like the dip very much served on French bread, but I used low sodium bacon and it was still pretty salty; if I had used regular bacon I fear it might not have been good at all. I thought it tasted best when really warm, so next time I would serve it in a mini chafing dish to keep it hot.

Butterscotch Brownies III

I cut the sugar down to 3/4 cup, baked 28 minutes, and the brownies came out quite dry. Perhaps reducing the sugar to make them not too sweet as other reviewers reported, made a difference in their texture.

Artichoke Salsa

This definitely needs time in the fridge for the flavors to blend. I took the advice of some reviewers and chopped it a bit in the food processor, which made it more manageable on a chip, but less appealing visually. In the end, I think it would have been better served on crostini.

Ultimate Twice Baked Potatoes

We had these with steak and salad, and my finicky teen daughter thought it was the perfect meal! I used a bit less low fat sour cream. Worth the calories? Probably!
