Chocolate Orange Truffles

These were very good! I have to say, though, that I missed the professional look of tempered chocolate. I rolled half of them in pecans and the other half in cocoa. Freezing the balls for thirty minutes before coating them in chocolate made them very easy to work with. I just read in a magazine that, in order to avoid the foot that comes from coating with too much chocolate, pour some chocolate in your hand and roll the truffle in it. You have more control than dipping in chocolate. I doubled the recipe; the original recipe doesn’t make many truffles. Very nice and easy!

Garlic Broccoli

I was looking for a healthy salad that I could make ahead for a party I am giving. I made this with balsamic vinegar and blanched broccoli. I snuck a taste after three hours, and liked it. Once I added the cheese to my testing portion, I was not impressed. The next day when I re-tasted, the broccoli was a very strange color and I did not like the salad at all. Adding the cheese just made matters worse. I would only make this again if I was going to eat it within a few hours.

Quick and Easy Chicken Noodle Soup

Usually I make chicken soup with a whole chicken, making my own stock. When my daughter came home with a cold though, I had to make due with what I had on hand. I expected this to be a somewhat mediocre soup, good enough for someone who couldn’t taste that well. This was a surprisingly good soup! I sautéed the carrots and raw chicken chunks along with the onions and celery. The vegetable broth made the canned chicken broth have a much more interesting flavor. As always, I cooked the noodles separately and added them to the soup as we ate it. I will make this soup again.

Italian Butter

I mix all the dry ingredients together, using a good quality salt, to keep on hand. When I am ready to serve this, I mix them with either fresh or roasted garlic, shredded asiago cheese, and pour the olive oil over the top. This is great to have on hand as a quick appetizer or to serve with soup or a salad.

Delicious Ham and Potato Soup

This is a wonderful, hearty, winter soup; we love it! To cut down on fat and sodium, I made less white sauce and mashed some of the potatoes for thickening. Also, I used low sodium chicken broth for some of the water and just a small amount of Penzey's chicken soup base. This is a versatile recipe and I can foresee many variations, including one in which I sub crab for ham. Yum!

Taco Seasoning I

Great recipe; very fresh tasting! I used about 3/4 teaspoon kosher salt, and I thought the seasoning was perfect. I will keep a supply of this in my pantry!

Dirty Diapers

I tried these because I am giving a baby shower, and they are adorable! Not only do they look cute but also taste great. I will make them again in a different shape for the teens in my life, because they really do taste like the sliders they all love so much. I made them, froze them, and baked them frozen. Delicious! There is just one thing...the name. "May I offer you a dirty diaper?" I don't think so; we'll be calling them "nappies" at the shower! :-)

Pigs in a Blanket

Toffee Crunch Ice Cream

I used semi sweet chocolate and the flavor of the ice cream was very good. The texture was not as creamy as we like, however; it had an "ice milk" type texture that we found unappealing. I may try it again with all cream.

Homesteader Cornbread

Obviously my family is in the minority, but we did not like this cornbread at all. We found it very dry, even though I followed the directions and soaked the cornmeal, and lacking in flavor. Because I used King Arthur organic white whole-wheat flour instead of white, which could have changed the texture a bit, I am rating two stars instead of the one star rating my family and friends gave it. This recipe is probably not for you if you like a moist, cake like cornbread.

Easy OREO Truffles

We thought these were just ok; we would not make them again. I read in a magazine a tip for making truffles so you don't get the dreaded "foot". As messy as it is, you put chocolate in the palm of your hand, roll the truffle around and then put the truffle on your tray. It works!!

Balsamic-Glazed Salmon Fillets

Excellent and easy recipe! I did add an additional 1/2 Tablespoon of honey, but other than that, did not change a thing. It had a richness of flavor that I often associate with grilled salmon.

Scented Applesauce-Cinnamon Ornaments

These are so much fun to make and very easy to work with. I use a bit less applesauce and I bake mine at 250 degrees for about 2 hours. They certainly make your house smell delightful while baking and I hang them on our kitchen tree so that we can continue to enjoy the aroma there.

Simply Lasagna

Making lasagna often seems to me like such an arduous task, but this lasagna was a snap to put together and I liked that the calorie/fat count wasn't excessive (although I was a little heavy handed with the mozzarella cheese, so I am not sure that mattered). I used freshly grated parmesan reggiano and a 32 ounce jar of Rao's marinara sauce. Next time, I would use even more sauce. This was good, I would make it again.

Easy Caramelized Onion Pork Chops

If you make the recipe as written, you will have to take the pork chops out to boil down the liquid and carmelize the onions. I did as others suggested and took the cover off for the final simmer, and my pork chops were pretty dry. I used Penzey's 4S seasoning salt and they were pretty tasty without any additional spices.

German Red Cabbage

This is an excellent and authentic tasting German red cabbage recipe. I did have to add more sugar at the end of cooking, however, as mine was mouth puckering tart. It could have been my apples, but I would definitely give it a taste test before serving.

Honey Crunch Pecan Pie

My pecan pie-loving husband declared this the best pecan pie he has ever had! I used brown sugar and brown sugar corn syrup in the filling as Grannyloohoo suggested and I felt that the addition of the bourbon gave the filling a nice flavor as well as cutting the overall sweetness that I tend not to like in a pecan pie. The crunchiness of the pecan topping was perfect.

Blue Cranberry Sauce

What a fabulous cranberry sauce this is!! I did have to use 3/4 cup sugar and used a bit less allspice. The spice combination was perfect. This will be a "must have" addition to our Thanksgiving table.
