Marinated Chuck Roast

Fabulous flavor! I doubled the marinade as I had a larger piece of meat. I marinated it for around 14 hours. My husband loved it! The meat was very flavorful and browned nicely. Next time, I would like to add a little brown sugar to change the flavor and make it more like a BBQ sauce, but I will definitely use this recipe again!

Million Dollar Cake

Don't you just hate when someone changes your recipe, but in an effort to cook/bake more lowfat/sugar free this year, here are the changes I made. Baked the yellow cake mix as called for including the butter. (Could have used applesauce instead of butter to really make this low calorie.) For the topping, used lowfat cream cheese, DID NOT add confectioners sugar, added the crushed pineapple with juice, added package lowfat, sugar free vanilla pudding mix and a container of lowfat frozen whipped topping. Baked in a 9 x 13 inch pan. The cake was very good and moist and, surprisingly, my picky husband did not even notice these changes! This cake has lots of wonderful flavors with the oranges and pineapple. I will make this again!

Hoppin' John

There was nothing bland about this delicious dish! I followed the recipe but in addition, added three chopped jalapenos, four chopped roma tomatoes, three garlic cloves and two pork chops that were sitting in the refrigerator. I used two cups of rice instead of three. I was cooking this New Year's Eve and it smelled so good, my husband and I had a bowl for dinner!

Out of this World Turkey Brine

This is my first time brining a turkey. The turkey was delicious, moist and juicy! I had a 25 lb. fresh turkey and when baking, I added onions, celery and garlic. The whole house smelled fabulous and Big Tom served his purpose well! Great recipe!

Sarah's Applesauce

YUM, YUM! What a difference in taste homemade applesauce makes! Had planned to add extra apples but found one rotten apple which had to be thrown out. While the apples were cooking, kinda eyeballed it and decided to take out some of the liquid. I'm glad I did. Should never have to buy applesauce again with this wonderful recipe.

Cola Cake

Super fabulous! I was out of eggs, oil and milk. I did not have a chocolate cake mix but used a yellow cake mix and added 1/2 cup of unsweetened Hershey's cocoa. I also added semi-sweet chocolate chips which I had on hand. Amazing flavor and moistness. Didn't even feel the need to frost this cake after adding the chocolate chips. Easy, fast and delicious!

Microwave Peanut Brittle

Wonderful in the microwave! I had made a batch cooking it on the stove and it did not set right for me and had to throw it out. I tried this microwave method and it was quick, easy and delicious.

Raisin Sweet Potato Bread

Absolutely the best raisin sweet potato bread! I also added a half cup of walnuts and maybe a quarter more cup of cooked sweet potatoes. Baked for 60 minutes. Love the moistness and flavor. Will make this again for Christmas and add cranberries!

Fluffy Pancakes

Our grandchildren always request pancakes on Saturday morning after spending the night. They helped me make these fluffy, delicious pancakes. We added cinamon and sugar to the mix. We made both chocolate chip and blueberry pancakes. These pancakes are light, fluffy and delicious even without the syrup!

Bacon Chicken and Dumplings

I am going to say there is no way to mess up this delicious recipe considering what I did to it! My husband had been asking for chicken and dumplings for a while. I had intended to go to the grocery store to get the items I needed but when I woke up, we were under a severe thunderstorm watch. I decided to improvise. First, I didn't have bacon so I sauteed the onions in 1 tablespoon butter-flavored shortening. I also chopped up celery, garlic and a carrot. If you can imagine this, I didn't have any milk or half and half either! I did have some powered milk on hand and used that along with 2 cans of cream of chicken soup and a can of whole kernel corn. I boiled a whole chicken and used some of the chicken stock from that after straining out the fat. After deboning the chicken, I added poultry seasoning, pepper, parsley and a little cumin as another reader suggested. I didn't feel like making the dumplings so I cut up pieces of a refrigerated can of biscuits I had on hand. This was quick, delicious and made a beautiful presentation with plenty of soup. I will definitely try this recipe the next time as posted. Thank you for a fabulous recipe!

Peanut Butter Pie I

Great job Stephanie! I also needed a dessert for the church's annual Jamaica cake walk. I didn't want to go to the store to get ingredients for another dssert I had planned on making so I scrounged around to see what I had on hand. I had a graham cracker crust and used that. I had some pure peanut butter without added sugar or other additives so I used what I had on hand. The whippng cream gave it richness without being too sweet. It was fast and easy. I added milk chocolate chips on top to give it a little extra look. yum. I will definitely make this again.

Chocolate Mayo Cake

Enjoyed this cake! I added pecans to the batter from my mother-in-laws trees and it was delicious with a dollop of fat-free whipped topping. It rose nicely....good recipe. No need for a boxed chocolate mix.

Whoopie Pies VIII

WOW! What an incredible dessert! The only thing I didn't do was add the egg whites at the end cuz my filling was already fluffy and thick. I really didn't want to mess it up! I used dark cocoa for this recipe. The cake part was so rich. This recipe will so enhance my reputation! Thank you for this awesome recipe.

Pineapple Casserole Dessert

I have made this three times this month already! My son was home from college and I packed him some goodies, including some of this dessert. He called me specifically to tell me how good this was. I do cut back on the sugar and butter some, cuz it just seems like so much. I also tried a baguette of french bread as another reviewer suggested. Delicious! I have not tried it with the cheese as it just doesn't seem to need it. This is a treat for sure!

Oatmeal Raisin Cookies IV

This is a gourmet cookie! I went with some of the other reviewers' suggestions and added a tsp. of baking soda and baking powder and 1/2 tsp salt. The reviewer who mentioned checking the expiration on the baking soda was right on! Even though I do alot of baking, my baking soda was expired. I even added chocolate chips and baked at 375 instead of 350. I made these cookies larger and watched them until they were ready to take out of the oven. It's important to let them cool before handling so they won't crumble. Thank you for a great recipe!

Beer Pancakes

WOW!! The lightest and fluffiest pancakes. My granddaughter was home sick today, but of course, wanted pancakes for breakfast. I didn't have pancake mix so I tried this recipe with Root Beer. I didn't feel like melting butter, so I added vegetable oil, a little vanilla and cinnamon. Next time, however, I think I will decrease the sugar somewhat. My granddaughter asked me to PLEASE make some for her little brother after school. My grandchildren love my pancakes, but they asked me to ALWAYS make these.

Key Lime Pie VII

Fabulous pie! This is really pretty quick and simple to make. I added a few drops of green food coloring and because I had a frozen pie crust I had made a few weeks earlier, I baked the pie crust and after it cooled, added the key lime mixture. It was so good, it didn't even need whipped topping, but was excellent with a dollop. I also used Mexican limes which were available at the grocery store and are a little larger than key limes. They were very juicy and was quicker to get the 3/4 cup of lime juice. I couldn't tell the difference in taste.

Gingered Flank Steak

Delicious!! My flank steak started marinating Wednesday around noon, the day before Thanksgiving, as I intended to serve this for dinner Wednesday night. HOWEVER, with all the hustle-bustle and guests coming and going, I did not get to make this until SATURDAY evening. The flavor was mild and smooth without being overpowering...the meat was incredibly tender and moist. I pan seared my meat and then cut it into slices for fajitas. Because we like jalapenos, I sliced some along with onions and added it to the meat after it had cooked just a bit and served with tortillas. My husband was so tired of turkey that this was a very nice change. The flavor was wonderful! Thank you for a very nice recipe which I will make again!

Broccoli Casserole

Wonderful dish! I had one can cream of mushroom and one can cream of celery so I used them both. I also steamed my rice and had leftover chicken which I shredded and added. Used frozen broccoli florets and they were great. Instead of the processed cheese, I also used grated cheddar cheese. Mixed it altogether and added garlic powder, pepper and salt. Delicious!

Easy Chocolate Bundt Cake Glaze
