Fluffy Pancakes
Our grandchildren always request pancakes on Saturday morning after spending the night. They helped me make these fluffy, delicious pancakes. We added cinamon and sugar to the mix. We made both chocolate chip and blueberry pancakes. These pancakes are light, fluffy and delicious even without the syrup!

Bacon Chicken and Dumplings
I am going to say there is no way to mess up this delicious recipe considering what I did to it! My husband had been asking for chicken and dumplings for a while. I had intended to go to the grocery store to get the items I needed but when I woke up, we were under a severe thunderstorm watch. I decided to improvise. First, I didn't have bacon so I sauteed the onions in 1 tablespoon butter-flavored shortening. I also chopped up celery, garlic and a carrot. If you can imagine this, I didn't have any milk or half and half either! I did have some powered milk on hand and used that along with 2 cans of cream of chicken soup and a can of whole kernel corn. I boiled a whole chicken and used some of the chicken stock from that after straining out the fat. After deboning the chicken, I added poultry seasoning, pepper, parsley and a little cumin as another reader suggested. I didn't feel like making the dumplings so I cut up pieces of a refrigerated can of biscuits I had on hand. This was quick, delicious and made a beautiful presentation with plenty of soup. I will definitely try this recipe the next time as posted. Thank you for a fabulous recipe!

Peanut Butter Pie I
Great job Stephanie! I also needed a dessert for the church's annual Jamaica cake walk. I didn't want to go to the store to get ingredients for another dssert I had planned on making so I scrounged around to see what I had on hand. I had a graham cracker crust and used that. I had some pure peanut butter without added sugar or other additives so I used what I had on hand. The whippng cream gave it richness without being too sweet. It was fast and easy. I added milk chocolate chips on top to give it a little extra look. yum. I will definitely make this again.
