I'm living in Seattle and learning to cook! My roomates and I trade off nights of the week making dinner for each other... Cooking for one isn't easy or cheap so splitting it with the roomies definitely helps out!

My mom makes the best green chile chicken enchiladas on Christmas Eve. We usually have them before we go to midnight mass.
My cooking tragedies
I was trying to bake cookies for my mom when she got home from work (I was probably in 7th grade?) and I started to pre-heat the oven as I was mixing the dough. Feeling very proud of myself and excited for how proud my mom was going to be I opened the oven to stick the cookie tray in and saw a small fire had started. My mom puts dirty dishes in the oven to clear off the counter and there were some plastics in the oven. So my cookies were left uncooked, I ruined my mom's plastic bowls and my best friend's mom had to come over to help me put out the fire in the kitchen.... disasterous, and my mom was NOT proud :(

Apple Goat Cheese Bruschetta

Herbed Mushrooms with White Wine
This recipe is delicious!!! and so easy! I didn't add any italian herbs in the beginning and they still turned out very flavorful... Great paired with steak...

Charbroiled Salmon
I think this recipe could be really great, the marinade was just a little too salty for me and I only marinated it for an hour and a half, not the recomended two plus hours. It might be because I didn't charbroil the salmon, I used packaged salmon from Trader Joe's that comes in a re-sealable plastic bag that you use to marinade and cook the fish in. It was super easy to make this way but next time I will try grilling it and adding more wine and less soy sauce to the marinade.
