Cioppino
This dish was a HUGE HIT at my Christmas Feast for 18! I calculated the recipe using 25 servings and then added calamari and Lobster tails (about 3.5 lbs. for my recipe cut up into bite sized pieces.). I did let the broth simmer for a little longer then stated....probably about 90 min. Seafood added in this order: clams, mussels, lobster, shrimp, calamari, then scallops. Once the scallops were done I removed from the heat. It was absolutely PHENOMENAL and this will be a yearly tradition in our family. Thanks for such a wonderful recipe!
