Oatmeal Peanut Butter Cookies

These are absolutely wonderful. My daughter is allergic to nuts and eggs so I used soybutter in place of peanutbutter and egg-replacer instead of egg. They turned out wonderful and is my daughter's fav. cookie!

Jordan Marsh Style Blueberry Muffins

Very good w/ a little tweaking. I used 1/4 C veg. shortening and 1/4 C margerine; I used 3/4 C white sugar and 1/4 C brown sugar; I used an egg replacer b/c my daughter is allergic to eggs; I also sprinkled them w/ cinamon sugar on top before baking. I baked them at 375 and they took less than 20 min.'s. I was very impressed that they made such wonderful sized muffins, those boxed kinds are always so small. Thanks :)

Chicken Chimichangas

They were good and easy to make but were very bland. I also baked them instead of frying them as posted by other reviewers b/c I don't like greasy foods. I think the next time I make this, I will add taco seasoning to my chicken.

Red, White, and Blue Fruit Smoothie

This recipe was very good, thanks. :) I used frozen blueberries and omitted the ice, and b/c I didn't have vanilla yogurt, I used strawberry yogurt, I also omitted the vanilla extract as I didn't want the added sweetness.

Sloppy Joe Sandwiches

This was a great basis/starter for sloppy joe. I did a little tweaking though: I used chopped onion and also chopped green pepper and browned it w/ lowfat turkey burger, doubled the recipe and kept the sauce the same except omitting the onion powder since I used whole onion. It was great and I will definately make again, thanks! :)

Taco Seasoning I

Love it, I will never buy taco packets again! I waited until I had an empty seasoning bottle, washed it, then tripled the recipe and I keep it in this bottle,labled w/ a piece of tape. LOL

Hearty Split Pea Soup

This recipe is great, love it! I did use yellow split peas instead of green ones, as they have a lighter "pea" flavor. I also used water and no milk (daughter is lactose intolerant) and it was still thick and smooth w/out it. Next time, I might try it w/ rice milk.

Classic Peanut Butter Cookies

I love this recipe but I had to substitute some things as my daughter is anaphylactic to eggs and nuts. So for those of you w/ allergies try this: Instead of peanut butter, use Soybutter or Sunbutter; instead of eggs, use EnerG egg replacer; and if your little one is allergic to milk use a butter substitute; and if your little one is allergic to wheat, use gluten free flour. Hopes this helps. :) Also, I added more flour and soybutter as suggestions from others. Thanks for a great recipe.

Quick Chicken Stew

Overall this dish was really good w/ some modifications. I wouldn't call it a stew though b/c it isn't broth based; its more like a one-dish meal served over rice. I like a lot of flavor so I added another clove of garlic, another bay leaf, and a bit more basil. I also added celery (as another user suggested) and it hit the spot. It was very filling (even for my hubby) and was fast and easy to prepare. Thanks for sharing :)
