Cream Cheese-Filled Coffeecake With Fruit Preserves and Crumble Topping

This turned out great but I had to cook it over 60 minutes. I used vanilla yogurt because that's what I had. I would have added vanilla to the cake batter if I had used plain yogurt. Also, rather than jam, I used frozen raspberries and mashed them a bit (less sugar that way and saves my precious homemade jam for a more worthy use). Oh, and I skipped all the extra work with the foil and served it straight out of the 9x9 pan.

Curried Squash Soup

Delicious. I was going to skip the cream sauce, but so glad I didn't. The soup has a good amount of kick. I was surprised my 4 year old and 2 year old didn't complain about the spiciness.

Halibut with Cream Sauce

Forgot the butter but didn't miss it. Added fresh chives because I had it. Baked 400 degrees for about 25 minutes including briefly under the broiler to crisp bread crumbs. Keep thinking about what other recipes could be enhanced with this cream sauce. 4 year old and 2 year old enjoyed it too!

Carrot Cake X

Very good for being so healthy. Of course, it had a nice layer of cream cheese frosting too. I took suggestions from others and made the following modifications. * only 1 cup sugar * no oil * 1 cup unsweetened applesauce * closer to 3 cups carrots * coconut was sweetened (part of the reason I reduced the sugar)

Toasting nuts before hand is important. you can skip the step, as some recipes do, but it's better if you toast. I substitute water for milk so I can share the nuts with my vegan friends.

Spinach Crumb Casserole

I cut way back on the butter for the bread crumb mix as one reviewer suggested, but it was still too buttery. Other than that, fantastic! We'll be eating spinach much more regularly!

Delicious and so easy! I tweaked slightly for what I had on hand & made it vegitarian: A little less tomato sauce; vegie broth instead of chick broth (no extra water); lots of extra fresh basil. This is a new favorite and I will make again soon.

Glo's Sausage Fried Rice

Very good. Very pretty with the peas, cabbage, and carrots. I didn't give it 5 stars because it was missing a little something... just not enough kick for me. My modifications: I added crushed red pepper to my own plate. I substituted frozen sugar snap peas for the regular peas, added a few tablespoons of a ginger sesame sauce, and used finely chopped pork roast from a prior meal in place of the sausage. It was a great dish for using up leftover meat. Will definitely add this recipe to our meal rotation!

Tender Potato Biscuits

Very good. I skipped the rolling and cutting. To save time I just rolled balls in my hand and flattened on the tray. I didn't add much sugar - as suggested by others - maybe only 1/8 to 1/4 Tbsp. Wished I had had honey in the house to put on these!

Salsa Chicken

Wonderful! I love how simple this is - I was working with minimal supplies in the house. I ended up making my own salsa - crushed canned pineapple, cilantro, red pepper, onion, tomato. Served chicken on a bed of lettuce with toasted chips and guac. Delicious like restaurant salads. Very tender chicken!

Round Steak and Gravy II

I didn't have onion soup so used 2 cups of water + onion and mushroom dry soup mix along with a can of the cream of mushroom soup. I also used garlic, chopped onions, and green pepper when browning the meat. I covered the roaster with foil and then put the lid on to seal in juices. This was a great fall-off-the-fork meal. I served with mashed potatoes --- to take advantage of the delicious gravy. I didn't have quite as much gravy as I expected, will add more water next time. To compensate, I made gravy with the browned bits in the pan, water from my potatoes, and a little cornstarch. Delicious!

I think the secret is having tasty gravy. This was a fantastic way to get rid of the leftover turkey. I plan to make this again tonight with leftover roast beef.

Curried Beef a la Tim

Pretty good and relatively easy. I didn't want to open a whole can of paste for the small amount called for, so I substituted ketchup. Seemed a little risky, but it worked well enough. I also added a dash or two of red pepper, and it was a bit too spicy for my 2 year old. It was nice for something different, but I won't be adding it to my recipe box.

Pumpkin Pancakes

This will be a new pre-thanksgiving tradition for our family! We had extra pumpkin when making pies, so tried this recipe. The only modification was to leave out the ginger, because I didn't have any. Real whipped cream was the perfect topping. Note that the pancakes are very thick, but it wasn't a problem.

Easy Peach Cobbler II

Fantastic! I modified it by using frozen sliced peaches (approx 4 cups, didn't thaw before using), reducing sugar to just 1 cup, and adding cinnamon & vanilla. I used homemade bread, but didn't count the slices. I tore the bread into smaller pieces, rather than strips as some suggested. Wow. Can't wait to have it again.
