Baked Salmon II

My husband liked this recipe. I just poured the marinade over the fish (forgot to wait an hour) and baked it for 15 minutes and it was done! I guess the fillets were pretty thin (and previously frozen).

Make-Ahead Spinach Manicotti

Love this recipe! I always forget to make it the night before, so I just make it the same day and it turns out just fine. Also, I cook it covered with foil for the first 30 minutes and then uncover for 15 min. So easy! Stuff the filling into a ziploc and snip & fill the shells. I even use slightly less sauce (but I use a garlic and onion flavor one) and add more spices. Yum!

Apple Oatmeal Crisp

Good, but too much topping. I skipped the white sugar entirely and liked the oatmeal cookie taste, but there was just way too much of it for 3 cups of apples. Plus, the topping is very heavy and thick (not crumbly). I still loved the flavors, I'd just use more apples next time.

Sausage Egg Casserole

fool-proof! I made this with veggie sausage patties (cut up one pkg morningstar) and 1 can chopped mushrooms, 1/2 chopped onion, and 8 oz sharp cheddar (plus another cup on top before baking). I didn't make it the night before (just in fridge about an hour and a half) and totally forgot to mix in the melted butter to the flour mixture until it was already all mixed, but I threw in the butter anyway. Baked loosely COVERED with foil for the first 40 min and then uncovered last 10 min. Turned out perfect!!! All of my guests loved it and many asked for the recipe. Plus, they had no idea it was vegetarian until I told them. Excellent!

Spoiled Baby Back Ribs

Great! made these for a party (double recipe) and got tons of compliments. My husband was skeptical about boiling them so long, but he changed his mind after tasting them. They were perfect and not too soft.

Ultimate Frozen Strawberry Margarita

Awesome! Best strawberry margarita, by far. Just make sure the strawberries and sauce are pretty melted. Mine were too frozen and with the ice and frozen concentrate, the blender wouldn't turn enough and the drinks came out too thick. Next batch was perfect after the strawberries had defrosted.

Ramen Cabbage Salad

I used a bag of cole slaw mix and added a handful of almonds and dried cranberries. Only used 1/4 c sunflower seeds (plenty). It turned out really delicious! My only complaint is that it was too oily. Next time, I'll cut down on the oil. I also used half sesame oil and half olive oil - awesome!

Easy Garlic Broiled Chicken

My husband really liked this one. Baked whole chicken legs (removed skin) at 375 for 35 min and last 5 min on broil. Turned out moist and full of flavor.

Apple Pie by Grandma Ople

Hands down, the best apple pie ever! I've made many, since it's my husband's favorite but was never "wow-ed" by any until this one.Definitely follow the advice about just saving enough liquid to brush the top and add the spices you like. You won't be disappointed.

Brown Family's Favorite Pumpkin Pie

I made this recipe for a family dinner and nobody liked it. There are way too many nuts which totally overwhelm any pumpkin taste. The part without the nuts was pretty good, so I still gave it 2 stars but I wouldn't make it again.

Chicken Pot Pie IX

My husband liked this recipe but despite the extra sauce, the chicken was still a little dry. I think I'll cut back on the cooking time on the first step next time. I used a can of mushrooms (with juice) instead of carrots and added 1/2 tsp poultry seasoning and extra butter and broth. I also cooked the chicken in broth and brushed the pie crust with egg white and baked it 5 min first which worked out great! Baked at 375 for 45 min as suggested and it was perfectly brown.

Spicy Black Bean Cakes

These were good, and I'll make them again. I shredded the sweet potato and made the sour cream topping the night before to save time. I followed the other suggestions and made these changes to the recipe: use 2 eggs in the bean mixture and also add to the basic recipe 1 can mild diced chilies, 1 tsp chili powder, 1 tsp coriander. I also used 1Tbsp jarred chopped jalapenos instead of fresh and it was really mild so I'll add more next time. I'll also add some cilantro next time. This recipe made 18 patties (golf ball size when I scooped them out) which I flattened. I had to move the oven rack to the middle because they burned otherwise, and then I baked them for 7 min on one side and 4 on the other. They were good, but needed more spice. Also, next time I'm going to make them much thinner/flatter and add more salt & pepper (I only used 1/4 tsp of each).
