Spinach Cheese Manicotti
I made this and followed the recipe exact and for some reason when I served it hot out of the oven... it was very runny. The ricotta mixture was almost too soupy like although the taste was okay I was more concerned as to why the ricotta was so runny. I thawed and dried the spinach really well before adding it to the recotta (I even used a mini strainer and really got the excess water out of it). BUT to my surprise the leftovers were amazing. It thickened up over night in the fridge and really made an awesome lunch the next day. That's why this recipe gets three stars instead of the 2 i was gonna give it. Not one of my boyfriends favorites. BUT hey you can't please everyone.

Tiramisu II
This was my first time making tiramisu. I brought it to my boyfriends parents house for a get together with his family. His dad said that I could a win tiramisu contest & even mentioned it again to my boyfriend to tell me that "he was out of tiramisu" (haha). Everyone loved it and was really impressed. Only thing though I added sugar to my whipped cream. And I had to work around food allergies so I made one with strawberries (one layer of strawberries in the middle) and one with chocolate shavings and curls on the top. (see my picture). It was a huge hit!!

Penne a la Vodka II
My boyfriend is italian and he absolutely loved this dish. He said it tasted like it was from a restaurant! I did use half and half instead of the heavy cream. I will use this recipe again.
