Pesto Cheesy Chicken Rolls

Yummy! I added a few strips of sundried tomato to each of the chicken breasts and sprinkled some oregano and crushed red pepper on top of them for a little extra flavor. These were fantastic (have made them at least half a dozen times now)!

Very easy, very tasty and it reheats great. The only problem I had was that it was a little greasy from the meatballs, but I don't know how to fix that without going meatless (bleh!).

A Jerky Chicken

This is fantastic and SO easy! A single big habanero is just enough spice - use two if you want it very warm! I was surprised to read the review from the woman whose hands were burning after cutting the pepper, but I guess it's all in what you're used to. We cook a lot of spicy food down here, and I've chopped up a dozen habaneros at a time before without getting even a finger tingle. I'd never heard of anyone wearing rubber gloves before. :S

Sombrero Chicken

This is a fun idea - it's like fajitas without the grilling! I made this for my b/f and two of his friends last weekend (a moment of weakness agreeing to cook for 3 guys!) and they loved it. I added a few jalapenos along with the pepper and onion, and I used pepper jack cheese to give it a little bit of a kick, but otherwise I wouldn't change anything.

Chipotle Shrimp Tacos

I made these for some friends last weekend, and they were very good. Three peppers isn't enough, though. I used five and everyone's opinion was they probably needed two more. Still, a fun and easy dish!
