Broccoli Chicken Casserole I
I cut this recipe in half. Cooking for 2 here. I used cream of chicken instead of mushroom. It turned out fantastic! I covered it with foil for 45 mins and removed foil for remaining 5 mins. Let stand for 5 mins. Turned out amazing! I also used fresh broccoli which is what I had on hand. Hubby loved it! No need to add salt to this dish.

Banana Pancakes I
I have never had banana pancakes before. I made this for the 1st time and added a little bit of cinnamon to it. They were so good! I omitted the oil and used nonstick spray and it worked wonders! So easy to flip them! I also used 3 very ripe medium bananas since that is what I had to use up. I cut down on the suger a tad bit. I cooked them on low with a lid on to be sure they cooked through. Kept them warm in the oven which also helped to cook it through. Thanks for the great recipe!

Cashew Chicken with Water Chestnuts
This was so good I couldn't stop eating it! Thanks so much for sharing! I modified it to what I had on hand. Didn't have water chestnuts. I substituted slivered almonds, toasted for the cashews since I didn't have any. 4 skinless boneless chicken thighs. Doubled sauce. Omitted hot sauce. Used sweet duck sauce (from dollar store). added 2 TBSP brown sugar Variety of veggies. Baked it in oven (lined with foil). Pan fried the veggies then added it all together when the chicken was cooked. Served it with noodles. Was very good! I will try it with rice next time.
