Chapaleles
I tried this last week but made a few changes. I used 1 tablespoon of low-salt butter instead of the lard and I used canola oil in lieu of vegetable oil. I added chopped onion, scallions and a bit of fresh garlic as well. They come out pretty greasy, so pat them between layers of paper towels when removing them from the frying pan and voila!

Raspberry Lemonade Pie
Absolutely amazing! A great light desert for the summer! I changed the recipe slightly by using home made lemonade instead of the frozen concentrate, and I used low fat cream cheese and cool whip light. I also added blueberries into the mix for Memorial Day weekend and it turned out fantastic! :)

Holiday Chicken Salad
This was the best chicken salad I have ever had!! I made a few adjustments... instead of bell peppers, I used white onion and I also added half of a peeled carrot. It turned out to have the best flavors!
