This should be titled "Worlds Best Granola"!!! I have made this recipe a dozen times and everyone loves. I can not make it fast enough! I made some small changes to suit our taste but we can not thank you enough for this recipe!!! I did not add the maple syrup or the sunflower seeds or the walnuts. Instead I used a full cup of honey and I cut the oil in half. I also used about 2 cups of dry roasted no salt peanuts. Once done baking I added 1 1/2 cups raisins. Thanks!!!

Spinach and Leek White Bean Soup

Thanks for the healthy recipe. I have been looking to cook with leeks and this was a very quick and simple recipe to make. I used vegetable broth, added 1 tsp salt, the juice of 1 lemon, and sprinkled 1/4 cup fresh romano cheese at the end. I also garnished each serving with more romano cheese. The result was delicious. Thanks!!!

No-Cream Pasta Primavera

This dish was just okay for me and my family which was disappointing b/c so many fresh vegetables were used. The italian seasonings, balsamic vinegar and lemon zest were a bit overpowering and seemed to compete with each other. Next time I will use roast the vegetables with salt and pepper only; use fresh lemon juice instead of the zest and I will reduce the balsamic in half. Having said that this is a very healthy dish. The roasted vegetables were very good. Will attempt again.

Grandmother's Buttermilk Cornbread

I was a bit unsure about being to mix the batter well in a skillet but it came out GREAT! I used whole wheat flour and the powder buttermilk and used a fork to mix. My family of four gobbled it up!!! Thanks!!!

Garlic Red Potatoes

This was a very good recipe. I cut the butter in half and replaced the remaining half with olive oil. I added 1 tsp dried rosemary and I added a generous share of parmesan at the end instead of at the beginning. Great results! Thanks!

Margaret's Keftedes (Greek Meatballs)

This was a great recipe but I made a few changes to suit our tastes. First it is very important to soak the milk in bread as suggested. Also, make sure to grate the onion right into the bowl so you can integrate the juice from the grated onion. I used a generous amount of parsely instead of the mint. I skipped dredging in flour and instead used olive oil for health purposes. These are a hit every time!!!

Pumpkin Pancakes

These were fantastic. I used one cup of WW flour in place of white flour; instead of the spices I used 1 cup pumpkin pie filling instead of pumpkin puree, and in place of the oil I used applesauce. The end result were fluffy, flavorful pancakes that my kids gobbled up. Thank you!!!

Guacamole

Excellent!!! I normally use the food processor when making guac but I didn't this time and it was excellent! I used three cloves of fresh garlic minced and I substituted a few drops of tabasco in place of the C pepper. SOOO good! Even my 4 and 2 year olds ate it!

Salmon with Tomatoes

Salmon is one of my favorite dishes. I make it often, at least once a week and this recipe is by far my FAVORITE! I followed the recipe exactly except I added a bit more dill at the end, used 1 TBSP smart balance instead of 2 TBSP butter, and served with rice pilaf. Thank you, thank you for the beautful recipe. Even my four year old daughter gobbles it up!

Salmon with Dill

This was excellent! So quick and easy! Even the kids ages 2 and 4 ate it. I used fresh dill omitted the butter and baked it in over on a roasting pan. Very, very good. Thanks!!!

Yummy Honey Chicken Kabobs

This recipe is incredible! I can not believe how easy it was and how good. I did not have 2 hrs to marinate, only about 20 minutes and it tasted like it had sat in the marinade all day. Next time I will add pineapple to the vegitables. Thanks!!!!

Chocolate Bar Fondue

This recipe was excellent! I made this for the first time for a dinner party of 10 guests and everyone raved! Only substitution was instant espresso instead of instant coffee. Served fondue with grahm crackers, marshmellows, angelfood cake, bananas, strawberries and grapes. So good, thank you!
