Megan's Granola
This should be titled "Worlds Best Granola"!!! I have made this recipe a dozen times and everyone loves. I can not make it fast enough! I made some small changes to suit our taste but we can not thank you enough for this recipe!!! I did not add the maple syrup or the sunflower seeds or the walnuts. Instead I used a full cup of honey and I cut the oil in half. I also used about 2 cups of dry roasted no salt peanuts. Once done baking I added 1 1/2 cups raisins. Thanks!!!

Spinach and Leek White Bean Soup
Thanks for the healthy recipe. I have been looking to cook with leeks and this was a very quick and simple recipe to make. I used vegetable broth, added 1 tsp salt, the juice of 1 lemon, and sprinkled 1/4 cup fresh romano cheese at the end. I also garnished each serving with more romano cheese. The result was delicious. Thanks!!!

No-Cream Pasta Primavera
This dish was just okay for me and my family which was disappointing b/c so many fresh vegetables were used. The italian seasonings, balsamic vinegar and lemon zest were a bit overpowering and seemed to compete with each other. Next time I will use roast the vegetables with salt and pepper only; use fresh lemon juice instead of the zest and I will reduce the balsamic in half. Having said that this is a very healthy dish. The roasted vegetables were very good. Will attempt again.
