Black Bean Pizza
About this Cook
I am a college student majoring in English and Japanese with a developing interest in literary translation. I went on a baking frenzy last summer, utilizing all the seasonal fresh fruit and lots of recipes from this site. Since moving out of the dorms to an apartment this year, I have enjoyed experimenting with cooking (with which I am less comfortable) in addition to baking (with which I am more comfortable). I have been hosting weekly dinner parties for my friends and sometimes cook for just myself and my boyfriend several nights a week.
My favorite family cooking traditions
I love baking because it's something that my sisters and I do every year at Christmas when we stay with my grandmother.
My cooking triumphs
When trying something new I always freak out a little bit about how it will turn out, so it's a treat when my friends (all poor college students) thank me for the homecooked meal, or when my boyfriend quickly cleans his plate and grabs seconds, teasing me for worrying so much.
My cooking tragedies
Actually it was my boyfriend's birthday the other day, and although I am not usually confident, I consider myself a decent amateur baker, and thus was surprised when the birthday cake I was making for him first came out 1) under baked, and then 2) would not come out of the pan.

Crustless Spinach Quiche
Great recipe! The changes I made were to use fresh spinach, 2 cups of a different cheese (I did Colby Jack, I'm sure you could use whatever kind you like), and to add a sliced tomato on top as I saw in some of the photos. My boyfriend and I ate the whole thing for brunch this morning. He really, really liked it.

Lemon Garlic Tilapia
I made this last night and it was great! Talk about no effort healthful cooking. My fillets were a little small so I made five instead of four, and I added a bit more butter and half a lemon's worth of juice. We bought a big bag of individually packed fillets, which were easy to defrost in the sink with some lukewarm water (still in the bags). Now that I know how easy it can be, I will probably use frozen fish all the time. When you live away from the coasts (Iowa in my case), frozen is the way to go. Also, my boyfriend thought they needed a touch of salt, so next time I will add that. Thanks for the recipe!

Delicious Rosemary Bread
Definitely delicious! I followed another reviewer's suggestion (putting the extra rosemary on after the egg wash). Thanks for a great recipe!
