Jerk Seasoning

So good! Try this: Thaw one bag of frozen shrimp, then saute them in a little bit of oil and a generous sprinkling of this seasoning. Mix 3 cups shredded cabbage with 3Tblsps mayo, and the juice and zest of one lime. Throw in some onion or cilantro if you like it and let sit while cooking shrimp. Serve in warmed corn tortillas for the best shrimp tacos you ever tasted!! Thanks for sharing.

Drunk Deer Chili

I had some ground venison in the freezer that I needed to use up, and my man asked me to have some recipes ready in case he brought home a deer (it's deer season), so I tried this out. I am not a fan of venison, but this was good-- really good. I left out the water because mine seemed a little soupy, and I let it cook longer to reduce it down. The result was thick and rich with a strong beer flavor. I served this with cornbread muffins, and froze the leftovers. Yum!

Salmon in Lemon-Dill Sauce

One of the kids does not like salmon, so I made this when she was at camp for the rest of us. After the first mouthful, I got a big thumbs up from the 7yr old. The recipe looks complicated, but it goes pretty quickly. Absolutely delicous!

Quick and Easy Alfredo Sauce

I really did like this, but I did change it to suit how we eat. To lighten it up, I use only 1/4 cup of butter. It still comes out rich and creamy, and I feel better about it. Second, I use half the amount of garlic powder. The first time I made it, I used all the garlic powder to rave reviews, but it was too strong for me. I serve this over whole grain penne with sauteed chicken breasts and fresh vegetables like zucchini, summer squash, asparagus, mushrooms-- whatever is on hand and in season. With delicate fresh vegetables, I want their flavor to stand out. This sauce comes together quickly and easily, and is good with all the garlic or half, but I definitely recommend cutting the butter in half. The kids have requested to have this more often. High praise!

Cinnamon Ice Cream

I loved this, but the man and kids found the cinnamon flavor too strong. We served with fresh peaches, and the combo was great-- the fruit helped to tone down the cinnamon. This is a great old fashioned flavor of ice cream. I will make it again, but will use one tsp of cinnamon instead of two. The texture was very good and creamy. Thanks!

Pretty Chicken Marinade

This is now my go-to recipe for grilled chicken. It is a must try--don't change a thing. We marinated thin cut chicken breasts and it grilled so quickly! It was the hit of our Mothers' Day party. We served this with a green salad, corn on the cob, chili beans, hot dogs for the kids, and a homemade fresh fruit shortcake dessert. This recipe allowed my sister and me to serve a large group a really spectacular meal on a budget. And I have made it a few times since just for the family. Add this one to your permanent collection!

Baked Asparagus with Balsamic Butter Sauce

So good! I did as others suggested, and browned the butter first. Don't miss out on that- it smells incredible. I doubled the recipe, using 4 T butter, still only 1 T soy, and 2 T balsamic. I did not use salt and pepper. I served this at a week night dinner party, and everyone had seconds. Really delicious and very little effort. I also used frozen asparagus for convenience. Just lay them out on baking sheets while you are preparing the rest of dinner so they can thaw a little before they go into the oven. I served this with the crock pot turkey breast from this site, mixing some of the turkey juice with a jar of good quality turkey gravy (read the labels- some have lots of filler and chemicals). I also cooked a bag of white and a bag of brown frozen rice from Trader Joes. I arrived home from work 10 minutes before my guests arrived for dinner, and this was an impressive meal to present. Everything was delicious, but the asparagus added real class and a gourmet touch. Thanks!!

Chicken Tikka Masala

I introduced the man to Indian food, and now he craves tikka masala all the time. Thought we would try making our own and this was amazingly delicious. Made it on a weekend day when the kids weren't here. A little work, but worth it. Heed the salt warnings, though! I used 1t salt in the marinade, and none in the sauce, and reduced the cumin just a bit because it can overwhelm other flavors so easily. The man did the grilling while I made the sauce on the stovetop, some rice, and peas. Earlier, when making the marinade, i made cucumber raita from this site-- a must!! Oh, I also reduced the cayenne by half. Next time I will double this recipe by the man's request. Next time we have guests, we will serve this!

Penne Pasta with Cannellini Beans and Escarole

A great healthy meal. I added about 6 chicken tenders cut into bite size pieces because this dish was all I served. My grocer did not have escarole, so I subbed fresh spinach. I served this on Friday night before a trip to the movies and called it "dinner in a bowl". The kids thought it was weird to eat beans with pasta, but they liked it. I used whole grain pasta, and combined with the beans this is a high fiber hearty meal. Thanks!

Pork Chops with Raspberry Sauce

Wow! We had this for our special Valentine's meal, and I thought I would have to coax the man and kids into eating it because of the pretty red sauce. Not so. They devoured this, and it was gorgeous. I used balsamic vinegar after reading the reviews, and it was great, though I bet the white vinegar makes an even prettier sauce. Maybe next time I will try white balsamic vinegar- I have seen it at Trader Joes. Now, take my advice and double the sauce. If you don't, you will wish you had! My only complaint is that I could not find a seedless raspberry jam made without high fructose corn syrup. Oh well. Can't be perfect all the time! Thanks for this recipe. Incredibly good!

Pumpkin Pie Bars

So good! Had a can of pumpkin pie filling, and did a recipe search to see how I might use and found this recipe. I like to make desserts from scratch, but this was part of a party menu, so I loved that it used a box cake mix and was simple to make. I added a handful of chopped walnuts to the topping. Lots of guest compliments, and no one woud guess it was so easy to make. I was worried about some of the other reviewers comments about them not setting up. Mine were fine, but I did chill them just in case. Thanks!

Homestyle Turkey, the Michigander Way

Followed recipe exactly. WOW!! We served this at our New Year's party. My man had won a 19 lb turkey in a turkey shoot, and it was taking up space in the freezer so I planned the party menu around it. (If you've never been to a turkey shoot, you fire at targets, not turkeys. They give frozen ones as prizes.)Did not have to baste at all, and guests all said it was the best turkey they had ever had! Ranch Dressing II

The kids could not believe this wasn't from the package. I was thrilled that it had the great taste of Ranch with none of the chemicals in the packet. I diluted it quite a bit because I like thin dressing. I mixed it according to the recipe, then added plain milk til it was the consistency I wanted. Thanks!

Dawn's Candied Walnuts

YUM! I used pecans because I had a ton of them, but otherwise followed recipe exactly. I made these for my man and he loved them. Delicious on their own, in a green salad, or over ice cream. I had them over chocolate ice cream and the touch of cinnamon in the nuts was a divine complement. Highly recommended! Thanks for sharing the recipe.

Aunt Teen's Creamy Chocolate Fudge

The creamiest, most delicious fudge. Made this as one of my Christmas goodies, and am so pleased with the results. I did make changes because there was soooo much sugar-- in the marshmallow, in the chocolate chips, plus an entire cup of white sugar. First, you can skip the milk chocolate chips for convenience-- it turns out great with all semi-sweet. Next, decrease sugar to 1/2 cup. Last, I used 2 1/2 cups semi sweet chips, and one square of unsweetened chocolate to keep the chocolate flavor strong without it being too sweet. Delicious!! Mine came out dark and creamy. Heaven!

Perfect Pumpkin Pie

Pecan Pie V

This was a hit at Thanksgiving. Here is what you need to know: if you have crazy picky people who are expecting the supersweet gel-like base of a traditional corn syrup pecan pie, find another recipe. If that is not the case, this pie is delicious. Sugar caramelizes when it cooks, corn syrup does not. This pie is rich and dense with a deeper, not so sticky sweet flavor.
